For a first date? Neither.

I am more take them to dinner and then meet up at bars with my friends and go out (the find some excuse to afterparty at my place). This was back when I was single and would work pretty well.

Depends if you know the chick already or not. If you don't know her that well or it is a blind date go with the coffee shop idea. In that event if she is an ugly or boring as heck you can bounce very quickly. If you are stuck at dinner and it's not going well you are going to be stuck there for at least an hour minimum and paying for that wasted time. If it is second or follow up date, then go with the chill out option or dinner. But generally chilling at someone's house for a date seems kind of odd to begin with unless you are already dating.
