I had a Thai friend who absolutely hated Sriacha. Sriracha was a Thai city with different sauces, but a Vietnamese American riffed the sauce we know and love from it and made it a thing you'll see in many Viet restaurants.
I have never heard of Truff. Also I’ve got two large bottles of sriracha. They didn’t cost me anywhere near $70.

It’s not but most of the country isn’t NYC either. That’s why looking at overall US inflation isn’t the same thing as looking at prices in NYC.
