i buy two or three loaves at a time and just freeze them until each previous loaf is finished. I refrigerate the one in use and it always outlasts the expiration date...

My rule of thumb is if its stale or moldy, don't eat it! Sometimes it lasts a couple of weeks after the best by date and thats without refrigeration.

Doesn't get soggy, but it does get a bit stale for me if you do freeze it. Toasting the bread lightly brings it right back.

Assuming the bread hasn't been in the fridge, but in generally cool temperature over the duration, I'd still eat the bread if it doesn't smell funny or has mold on it.

But usually if the bread comes close the to "best by" date I don't leave it outside.

Depends on the type of bread. When I ate white bread, I found it went moldy/stale very soon after (or sometimes, even before) the "Best By" date. Wheat bread, though, lasts a good, long while. I've had wheat bread last a couple of weeks after the "Best By" date before showing any signs of age. That, as much as anything else, has made me switch to wheat only. Since I eat bread so infrequently, it makes sense to have bread that really lasts.

If it isn't stiff as a board, I'll eat the bread. I really don't care about the date on it. I usually eat wheat/sugar free bread.

Here's a picture of the bread I'm about to make a sandwich with:

Nothing wrong with a little mold.

"I just scrape the mold right off, and, sho' 'nuff have me a wish-meat sammich"

I have some bread that has Sep.30 on it, and I'm still eating it.
