Chuy's has a new Hatch green chili salsa that they serve you with the chips...
man, this stuff is totally bad @ss, bad @ss I say!!

I went there for lunch today and the server sets this salsa out on the table, I knew right away what it was, since they are having their Hatch Green Chili Festival... anyway, it was so freakin' awesome I was beside myself. You have got to try this stuff!!

I visited the location on Westheimer near Kirby.

It was so freakin' good I had to rave about it on this board!

I think it's just for the Green Chili Festival currently going on, but I talked to my server and they said they were going to try to make it a permanent thing... it's so freakin' good.

Whole Foods has a chili roaster too! They roast them out front and have them in produce.

We made a special trip to Central Market (San Antonio) to scoop up as many Hatch chiles as we could. I always try to grab the ones which have turned red as well, and set aside a special bag for them. Most people just use dried red chiles, but I like using a green chile stew recipe to make red chile stew - with fresh "reds".

You can roast your own if you want. Put them on a grill rack with a pan under it; cook at 400 degrees until they start to blister. (You can use a barbecue grill also.) When they have cooled, pull the top off (a string of seeds will come with it; probably best to throw most of them out, as the ones remaining will be plenty hot). Then peel the skin from the pepper. It should be wrinkled at that point and come off fairly easily. You may want to wear gloves, and - trust me on this - do NOT rub your eyes. Not even a little.

(and don't try this with Anaheims, the variety of chile that your grocery store carries the rest of the year. They don't taste good roasted. Or much any other way.)

Hatch is just a brand, right? I'm going to NM tomorrow for a few days. I'll be sure to pick up a dozen cans or so of Hatch green chile stew. Anyone had this stuff? As far as I know they only sell it in NM.

    Look here...

    Edit:

Oh, and Hatch is actually a city in New Mexico, not just a brand name...

Has the Chuy's on Westheimer closed yet? The last time I ate there (two or three weeks ago) the waiter said it was closing sometime in September. The other locations are supposed to stay open, though...

PS.. Hatch chili sauce at Chuy's rocks!

Care for some chili? I've added an extra ingredient just for you.... The merciless peppers of Quetzlzacatenango! Grown deep in the jungle primeval by the inmates of a Guatemalan insane asylum.

Hmmm Chuy's, I remember that place!

When I was there in May, I requested fine Mexican (fine, Tex-Mex) from my friend who was, shall we say, the chauffeur.

We went there (for some reason I had never heard of it having lived in Houston for 13 years), to the one in River Oaks.

Yeah, food was excellent. I really, truly miss my Tex Mex. [IMG]

Also, I was sitting next to a person who mysteriously looked like hp (at least through the pictures I saw). The waiter was a b**** though.

Hatch is a brand, but not when they say "Hatch peppers". That phrase has to do with a variety of chiles that are grown in the area around Hatch in southern New Mexico (middle of nowhere). They're related to Anaheims, but they have a longer growing season. They end up being bigger, darker, and much more flavorful. Truly spicy, and (unlike Anaheims) they don't have any of that bell pepper taste.

(bell peppers are a Yankee abomination... :) )

Hatch is a brand, but usually refers to the region the chilis were grown in...much like champagne.

If you are a true chili fiend, head down I-10 until you hit Las Cruces, NM. Find Mesilla Valley and stop at any road-side vendor and buy a bag of chili's. I prefer red, but green are good as well. Mesilla Valley (Las Cruces) is the chili capital of the world.

Yes, but i didn't know if y'all had the salsa too or if it was just in Houston... I don't get to Austin too much nor do I get to our other Chuy's out on Richmond (is it even still there?)

I've eaten at "La Posta!" It's one of the only places that serves 40'z on their menu.

    That place rocks!
