Anybody here on CF cooks? I dont know why but after watching the episode of How I Met Your Mother about hamburgers, i really want to make a hamburger. I don't the MCD burgers, i want real big grilled burgers. Who knows how to make it and could possibly help me? I wanna impress the fam =)

I usually make a combination of ground pork and ground beef. If ground veal is cheap enough I'll add a bit (if you're okay with veal). You want to get the meat with the most fat (fat=flavor). I go about 2-1 beef/pork ratio. About .5 or even .25 of veal if you go that route. Mix it up and make 6 ounce patties. I season them liberally with salt and pepper (cayenne if you're into spicy) and pan sear them on high heat. Get good color on both sides and finish in the oven. You can go the grill route as well. Then add your fixings. We usually have bacon, cheddar, tomatoes, pickles, sometimes avocado and jalapenos. We almost always have fries with our burgers. For a dipping sauce, we mix sour cream with a bit of cayenne and salt. Simple, but with a bit of a kick.
The Obama burger (first thing he ordered on AFOne) Medium-Well Chedder Dijon Mustard If you really wanna go all out go to a butcher and ask them to grind up some sirloin and some chuck fresh. If you want the charcoal taste then go for the non-briquet charcoal. You can also go propane grill or pan fried (which I prefer) Toasted buns, chedder and pepper jack for cheese, mustard, grilled onions (key), grill red pepper. Also only go for salt and pepper on your burger meat for the first time.
Mix together in a mixing bowl ground beef, egg, salt, pepper, tony chachere, and barbecue sauce. Shape into patties and (this is strange, but it works) poke a hole almost thru the center of each patty. Grill until done to your satisfaction. At least medium. The egg helps hold the mixture together. The hole fills in as the meat cooks. Enjoy.

thanks lol....what i have in mind is to have some cheese, mushrooms, GRILLED ONIONS XD...no bacon and all that stuff...trying to decide what kinda cheese though..hmmm...i prefer swiss but cheddar seems more traditional...
Cheddar is more traditional for the more traditional burger (bacon and all that stuff), but if you're going the mushrooms, grilled onion route, I'd go with swiss.
We've been doing these on a regular basis, and they are incredible. Trust me: http://foodporndaily.com/media/pictures/tyler/bleu-cheese-stuffed-burger.jpg Blue Cheeseburgers INGREDIENTS (Nutrition) 3 pounds lean ground beef 4 ounces blue cheese, crumbled 1/2 cup minced fresh chives 1/4 teaspoon hot pepper sauce 1 teaspoon Worcestershire sauce 1 teaspoon coarsely ground black pepper 1 1/2 teaspoons salt 1 teaspoon dry mustard 12 French rolls or hamburger buns Add to Recipe Box My folders: DIRECTIONS In a large bowl, mix the ground beef, blue cheese, chives, hot pepper sauce, Worcestershire sauce, black pepper, salt, and mustard. Cover, and refrigerate for 2 hours. Preheat grill for high heat. Gently form the burger mixture into about 12 patties. Oil the grill grate. Grill patties 5 minutes per side, or until well done. Serve on rolls.
I love Blue Cheese on burgers, but they've always been on top, not in the meat...maybe I'll try it... As for burgers, I keep it simple, similar to the above receipe, except no chives, cheese or hot pepper sauce, but I use regular mustard and add plain bread crumbs to keep it together, plus some other spices to give it a kick...
I use: 1 lb. Beef 1 egg sprinkle in Tony's or other seasoning tbs A-1 sauce 2 tbs BBQ sauce 1 piece of toast (take the toast and crush it into crumbs over the bowl. It mixes with the sauce and egg to hold the patty together, It is okay if you have some larger chunks just not too big.) Mix it up and grill to your liking. If you use a George Foreman grill you can also grill some onion pieces after the burger. They will grab the grease left on the grill and taste great.
I spent like 40 bucks on a cheap meat grinder. Toss in a chunk of sirloin, some chuck, couple slices of bacon, handful of peppercorns, couple slices of onion. That's a good start on a tasty burger.
