I'm cooking for 27 people and need 2 turkeys but am having a problem with limited oven capacity. I think I might need to outsource the making of a 2nd turkey--roasting one myself and hopefully purchasing another freshly fried thxgiving morning. Once in NOLA, my friends and I were able to order a fried turkey for thxgiving morning pickup--freshly made that morning. I'm having a difficult locating a similar place to buy a freshly fried turkey in Houston. Best I can find so far a bird fried the day before thxgiving. thx for any help.
That, or you can get a recipe, and do it yourself. It's mostly just injecting seasonings into the turkey, and then frying it in peanut oil. Yes, the peanut oil is expensive, but it is reuseable. I always prefer to this type of stuff myself. I'm pretty sure that the Honeybaked Ham Co. does fried turkeys for thanksgiving, also.
Also. Just a thought, but those premade jalepeno turkeys at grocery stores are awesome. My mom typically leaves that one out as an appetizer during the day, and we eat the homemade version that evening. Just a different take.

I'm the king of the two turkey system. I roast one in my roaster and fry another one outside. I cook for approx 20-25 people at my house. I make pies with my grandam the day before so they are ready to go. I love cooking thanksgiving day dinner. No cassaroles at my house. Good luck finding one HP.
Looks like AB has me covered. Fatty, I'd make one, but won't have the time that morning or the equipment. Plus, my mom just won't allow for much change on thxgiving. Would like to make one, but it's just not a good idea, would rather have my mom worry about other things, because there's no stopping her....it's quite an assembly line Wed and Thurs morning...great fun, as long as I can keep mom calm and happy, which translates into making it all look easy. I have more luck getting her to allow me to do new stuff for xmas dinner. Buck, yeah I already put out an email to Hebert's and two other places that specialize on cajun meats to see if they know of anyone or do it themselves. But looks like AB's father-in-law is the ticket! I don't think that Honeybaked turkey is made on Thxgiving.
Word of advice.. Never ever put a roasted turker next to a deep fried turkey.. Your feelings will just get hurt because nobody is eating the roasted turkey... Fried turkey is my preferred choice because when I do deep fry a turkey, the whole turkey is gone that night... You allways see oven roasted turkey leftovers alot of them..
