Good, simple recipe ideas

    All this food talk has made me hungry. But let's leave this thread for recipes you can whip up in 10 minutes or less.

    I haven't posted this in a while, but if you like Chuy's creamy jalepeno dip, mine is spot-on.

    20 oz. sour cream

    1 packet of Hidden Valley Ranch Dip Mix powder

    1/4 cup cilantro leaves

    3/4 cup pickled jalapeno slices

    1 tomatillo

    Take the tomatillo, jalepenos and cilantro and pulvarize in a food processor.

    Make the ranch, as usual. Then mix in the other pulvarized ingredients.

    Creamy Avocado Dip:

    Mix Fatty's jalepeno dip with Macalu's Guacamole and we might be on to something.

    One of my favorite recipes for a starter is Cilantro Soup:

    1 Bunch Fresh Cilantro (just leaves)

    2 cups of Chicken Broth

    2 Tbps of Butter

    1 (8-ounce) Package Cream Cheese

    1 (8-ounce) Container Sour Cream

    Crushed Garlic, Salt, Black Pepper, and Cumin to Taste

    Melt the butter, and puree all in a blender. Move to a pot and boil lightly for 15 minutes. Serve either warm (not hot) or chilled.

    I usually put it in a Crock Pot on keep warm, and serve it out of that.

    I've also used the same recipe with only 1/2 cup of chicken broth as an chicken enchilada sauce.

    Edit: I forgot. I also use about a tablespoon of the vinegar from canned jalepenos.

    Dish over Fritos corn chips
    Grate some chedder cheese over the top.

    That isn't guacamole. That would be a smashed avacado.

    Guacamole:
    2 avocados
    2 tablespoons minced jalapeno pepper
    4 tablespoons minced red onion
    1/2 small diced tomato
    2 tablespoon chopped cilantro leaves
    1 lime, juiced
    1 clove minced garlic
    Salt

    Halve the avocado and remove the pit with a sharp knife. Scoop the avocado into a small bowl and mash with a fork. Stir in the remaining ingredients, season with salt to taste, and set aside.

    Chip Dip
    Buy just about any frozen mexican food dinner and nuke it.
    Beat the crap out of it with your fork. The fork will not be needed after this.
    Clean the plate with tortilla chips
    Enjoy

    I do that all the time with chopped onions and sour cream. Here's a great hint: Take on onion and a cheese grater and grate the onion over the bowl.

    Here's another easy recipe that sounds disgusting but is pretty damn good.

    Chili & Egg Burritos:

    1 can chili
    6 eggs
    butter
    1 pack flour tortillas

    Heat skillet to med-high and place 2 Tbs. butter into skillet. Also heat a saucepan. Warm oven to 225 and place tortillas in oven wrapped in a wet paper towel or aluminum foil.

    Place chili in saucepan on med. high heat. Add eggs to skillet. Scramble eggs.

    Add eggs and chili to the tortillas and enjoy.

    great dip for chips

    heat a Bar of Velveta Cheese
    dump one can of rotel
    stir
    add four tablespoons of sour cream

    seperately, season a decent amount of hamburger meat and cook in seperate skillet.

    Mix cheese and hamburger

    Try it with 1 chorizo sausage, as well. That makes a great queso.

    Unbelievable Chicken

    1/4 cup cider vinegar
    3 tablespoons prepared coarse-ground mustard
    3 cloves garlic, peeled and minced
    1 lime, juiced
    1/2 lemon, juiced
    1/2 cup brown sugar
    1 1/2 teaspoons salt
    ground black pepper to taste
    6 tablespoons olive oil
    3 skinless, boneless chicken breasts

    Mix all ingredients in a ziploc bag with chicken breasts. Remove as much air from ziploc as possible and close it. Use the top or side of your meat tenderizing mallet (not the jagged ends - that'll poke holes) to pound the chicken through the ziploc bag until it's about 1/4 to 1/5 inch thick. After it's thin, continue to gently pound the chicken through the ziploc (helps chicken absorb marinade).

    Grill chicken and eat.

    It's better if you marinate overnight, but this works in a pinch. I use this speed-marinate method a LOT.

    yeah, that sounds better. Gotta get some chorizo. do you season the chorizo in any particular way? I've never cooked with it, though I love it in migas

    No, chorizo is plenty seasoned as is. And it's fairly cheap, too.

    We cook up the hamburger with taco seasoning in ours. I don't typically like using the chorizo because it is so greasy.
