Fried Turkey [advice]

    i have 3 gallons of cottonsee oil but i need another half gallon of oil so the turkey will be covered. can i mix peanut oil with the cottonseed oil for frying or even corn oil? really dont want to have to buy another 3 gallon container of cottonseed oil.

    Are you sure you can't get a smaller bottle of cottonseed oil at a health food store, like Whole Foods?

    If you do mix the oils, pay attention to smoke point. Cottonseed oil has a high smoke point, needed for the high temperatures used in frying turkeys.

    Peanut Oil has a VERY low smoke point, so unless you want your turkey tasting burnt and rancid I would advise you not to add it.

    Be careful whatever you do... there are many burn injuries this time of year from these things.

    About to smoke a turkey on the gas grill in a bit. I'm suppose to get the grill up to 400 and place the turkey on indirect heat...does that mean I turn off the flames completely under the turkey or just turn it down?

    It's too late to tell you now, but indirect heat means to place it opposite the side the flames are on.

    peanut oil works just fine.
