Just saw this posted on the Texas.org site, so I figured I'd see what y'all think. Pretty good choices, IMO.
Yeah, I voted for Brisket because, its always about the BBQ...Chicken Fried Steak is a close second...mmmm... as an aside, had lunch at Bennigans today and it was free...WOOHOO!!! Something about it has to be at your table for 15 minutes or its free...Had a Fajita Burger with Fries...It was badasss Carry on...
I vote chili...only cause it's rare to find REAL texas chili...but when you do it is the f'ing best thing ever...
I went with Fajitas. While I love BBQ, after being in Memphis, I have to admit, I'll take a rack of ribs over beef brisket any day. Also, Texas is well known for creating the fajita. It isn't Mexican food. It is Tex-Mex.
wow...kind of a tough question. i was going to vote for chicken fried steak, but i went with brisket. i figured CFS was more of a southern thing and brisket is truly associated with Texas. of course, i do loves me some chili...mmmmmmmmmm...
Chicken Fried Steak and mashed potatoes, both smothered in cream gravy with Texas toast. Yummy. Fajitas are a very close second.
Fajitas are my favorite, but chili is a close second. Peach cobbler and chicken fried steak seem more like Deep South dishes to me.

Peach Cobbler doesn't stand a chance, but it shouldn't be listed in here with those superb Texas entres.. it should be listed with things like Pecan Pie, Lemon Meringue Pie, etc...
Northern Mexican vaqueros have been grilling skirt steak & eating it with beans & tortillas for about as long as there's been cattle there. The whole norteño style of cuisine, centered around meat grilled over an open fire while out on the range, was brought to Texas/Tejas by Mexican cowboys. Norteño food later combined with gringo immigrant tastes & morphed into Tex-Mex. Skirt steak in gringo-land was a cheap throwaway cut used in hamburger & chili meat. We definitely popularized 'em, possibly even coined the term as referring specifically to grilled meat served with onions/peppers, but saying that Texas/Texans "created" fajitas is silly.
