Clint Eastwood is my favorite, by far. No doubt about it.

Also, no matter what kind of movie, you can't go wrong with Kurt Russell. The dude kicks ass in everything.

Other favorites are James Earl Jones, Wilfred Brimley and Brad Pitt.

For the ladies, I'll go with Jodie Foster and Reese Witherspoon.

Maybe I'm just sexist, or maybe someone's just slipping my mind, but I can't seem to think of any current actress who is any good on the cinema level save for her sex appeal.

Jodie Foster is just to monotonous in her roles to qualify, IMO (i.e. serious tones to all her movies, no real personality depth, etc.).

Angelina Jolie maybe? No, Tomb Raider II might have killed that prospect, but then again everbody does crappy movies for money at some point in their carreers nowadays.

Can anybody name a current actress that is known for her skill rather than her ass?

Kevin Bacon - Singlehandedly makes crappy movies watchable.
Ed Norton - Really good at the "average guy turned bad" gig.
Jack Nicholsen - A Few Good Men, As Good as it Gets. Need I say more?
John Malkovich - Most amazing eyes/stare EVER! Bet he makes millions in staring contests.

Julia Roberts - Awesome in Erin Brockovich, and at least decent in a lot of other stuff I've seen.
Glenn Close - Her and John Malkovich's performances in Dangerous Liaisons were two of the best I've ever seen.

As I said in my post above: Glenn Close. Though I agree with you that there seem to be precious few actresses who are known for much more than their looks.
