I don't know what the general standard is, but they should use all this new data as much as possible. SportVU for example should be used to look at acceleration/deceleration rates of each of those player dots or rate of change in direction or something, as a substitute to measuring the actual forces on each player's body, and I'm sure they can start to find correlations with injury rates/severity. But it's great that they are looking at this in much deeper quantitative depth, rather than the qualitative measures from years back. I really like that they are investing much more on taking care of their players' physical condition.
I didn't realize they couldn't use the sensors during actual games. as much as the data helps in general, there's a huge disadvantage in not being able to gather it when they are actually pushing the hardest.
