I just finished re-watching the Fellowship of the Rings appendices, and it reminded me of how much I enjoyed watching all this stuff about the production of movies, especially now that I've had a go at it (okay, it was only movies for high school projects, but those aren't exactly walks through the park when you have deadlines). I was hoping for suggestions of DVDs that have good making-of features, stuff detailing pre-production, post-production, whatever. It's also nice seeing the interaction between actors when not acting, and all that stuff. Might as well try to take advantage of this Blockbuster Movie Pass thing (almost like Netflix, but with more burnt calories and cash)
Panic Room has some good stuff on the multi-disc edition. Matchstick Men has a long, detailed extra documenting prr-production through post that's pretty good. Those are two off the top of my head.
Criterion Collections usually have some of the best "behind the scenes" features. They cost more but are worth it. I just bought the Dazed and Confused Criterion last week, I can't wait to watch it this weekend.
From what I understand, Fight Club has some amazing behind the scenes stuff. And the new Star Wars movies are good as well.
The Incredibles has some, well, incredible behind the scenes extras. It makes me wish I worked there.
I like the Infini Films (msp?) that give you behind the scenes during and of course before and after...The movie "15 Minutes" is like that and I like that movie a lot...
