Can anybody recommend any? I'm good at grilling and a very few other things.

Specifically would love to learn cajun, chinese and mediterranean.

I'd like to find out about some too.

If you hang around HEB or Central Market you'll see a cooking section with fine foods.

They give sample and recipes for all kinds of food.

I chill there and try out what the cooks make.

My wife runs a business (urbanchefhouston.com) that teaches hands-on cooking classes. Mediterranean classes are common. Chinese doesn't happen often, and I don't think she's done Cajun. But, she's flexible, so if there's demand she'll do it.

Most places doing this are demo classes. She's set up to let everyone cook. One other that claims hands-on is Well Done, but I haven't seen how it's done. She's operating out of an apartment so she doesn't have all the stoves and space Urban Chef has. If hand's-on is important.

Central Market has a ton of different classes, check their website. I understand some are demos and some are hands on - just depends on which one you take.
