Cochinita Pibil

    making this recipe this evening. i've done it before, and it turns out very nicely. the recipe calls for serving over rice, which is ok, but thought there must be a more authentic, or more interesting way to serve it (other than in tacos.)

    i'm sure Swoly has got a recipe?

    ^not very authentic, it should be buried in a pit, wrapped in banana leaves. in the yucatan, they don't eat a ton of rice. what's wrong with tacos??? grill some corn tortillas and make some pickled onion and habanero relish. beets would go nicely as a side. maybe not traditional but polenta would be a good alternative to tortillas.

    yes, but don't have access to a pit and banana leaves here on the UWS- things may be different in the wilds of Brooklyn. ;)

    the polenta is an excellent suggestion however, as are the beets- maybe these?
