making this recipe this evening. i've done it before, and it turns out very nicely. the recipe calls for serving over rice, which is ok, but thought there must be a more authentic, or more interesting way to serve it (other than in tacos.) i'm sure Swoly has got a recipe?
^not very authentic, it should be buried in a pit, wrapped in banana leaves. in the yucatan, they don't eat a ton of rice. what's wrong with tacos??? grill some corn tortillas and make some pickled onion and habanero relish. beets would go nicely as a side. maybe not traditional but polenta would be a good alternative to tortillas.
yes, but don't have access to a pit and banana leaves here on the UWS- things may be different in the wilds of Brooklyn. the polenta is an excellent suggestion however, as are the beets- maybe these?
