I'll throw in John Barry's work, especially some of his Bond movies like On Her Majesty's Secret Service and You Only Live Twice. Someone else mentioned Last of the Mohicans. Michael Mann movies in general have great music. The Insider and Manhunter are two other favorites of mine.
