Just wondering if anybody has any ideas. I love peking/beijing duck. Do the chinese in china call it peking duck or beijing duck now, btw?
I believe in Chinese it's called "fire duck". Just as Lobster sauce in Chinese is probably called "left over pork.
The dish can be found certainly in almost all restaurants across China if not in North America... The best Peking Ducks can be found in the Quanjude Restaurant (全聚德), which has several locations in Beijing, Suzhou, Hong Kong, and other Chinese cities... Can other Chinese posters find better places to eat Peking Duck? Maybe some mom-and-pops eateries can beat out the larger and more-established chains, who knows?
There's a restaurant at the 3rd or 5th ring road that caters to foreign deligates and the military brass.. We managed to have a meal there coz we had the chief of the military hospital showing us around...
