Looking for a tasty recipe for french frys... I love them so much!!! Probably going to go with a burger with cheese. Thanks GUYS!!!
Cut russet potatoes into long, 1/4" fries, then soak them in cold water, changing the water three times in a 30-minute period, then leaving them to soak for an additional hour (or overnight). Heat peanut oil to 320 degrees, and cook the fries for about 4-5 minutes, so that they're cooked through but not brown. Remove them to drain on a paper towels, and increase the temp of your oil to around 370. Put your fries back in the oil, and give them 2 minutes or so to crisp up. Season to taste with fine sea salt.

fries are one of those things that are worth having someone else make for you. Therefore the question is Who HAS the best French Fries. I love McDonalds (try them with the hot mustard sauce) and Little Bigs and Reef have good ones too.
This possibly black person isn't lying. Fried sweet potato slices are awesome. I'd cut them more like potato chips, though, but that's just me. Of course, I'm not black, so what the hell would I know?
I don't know about straight french fries... but make some crispy, good ones. Put em' in a bowl. Add big blue cheese crumbles, fresh, crispy bacon, green onions, light BBQ sauce or hot sauce, jalapenos -- YUM.
the key to great fries is to double fry them. Google search Belgium fries for the best fries in the world.
that is how you do it... but to make them over the top.. make some chimichurri http://www.epicurious.com/recipes/food/views/Chimichurri-Sauce-107159 put a little on them fries. add a little truffle oil.. and some fresh parm..
this. The only adjustment would be to spoil yourself by replacing (or adding to) the peanut oil with lard. Beware, the smoking point for lard is 370. So drop the final temp to 365. Use a candy thermometer. Also, buy a fine mess strainer to strain the oil for reuse. FF are expensive if you don't reuse the oil.
If you really want to go all out, get yourself some duck fat. It's pretty expensive these days since its the "in" fat to use.
