Not sure if it's in Houston, but there are four in Dallas, including one that just opened last week about two blocks from my apartment at Knox/Henderson and 75. It's basically Wendy's response to McDonalds' Chipotle, except with more options. You can still get a big burrito, but you can get tacos, taquitos, quesadillas, enchiladas, nachos, and more. The upside is that it's a healthier version. They use no lard or MSG in their food, and it's all fresh, meaning no cans or freezers. I had a grilled chicken taco, a fish taco, and a huge plate of rice and pinto beans for about $6, and it's the first time I remember leaving a Mexican restaurant with out that heavy feeling. Highly recommended and will become a staple in our diets.

Yeah, I dig Chipotle too. I like Freebirds better, but just because of their diverse tortilla selections, and they're about to open one here. Those things wouldn't be too bad, but I can't resist the cheese and sour cream.
I love Baja Fresh, highly recommend! I thought they were a part of Bob Evans (rather than Wendys), but I could be wrong!

Refried beans made with lard is the ONLY way to make them. Everything else pales in comparison. Never underestimate the power of pork fat...

That's pretty funny, I've always thought the same thing about Mexican food, But I would actually compare a Fajita to a Taco. What in the hell is the difference?
If you go to a real Mexican Restaraunt, Tacos don't have hard shells. I was in Mexico two weeks ago, I didn't see a hard shell anywhere. Stay away from Taco Bell, it will totally screw up your concept of Mexican Food. Try a taqueria.
I've been to plenty Mexican food restaurants, thank you. I ate hard tacos well before I ever stepped foot into a taco bell.
I don't think anybody is confusing Taco Bell with real Mexican food. I think "Tex-Mex" best describes most of the Mexican food eaten in the United States...good, cheap food that fills you up. Mexico actually eats lots of seafood. I think tacos originally had fish in them.
There is one a few blocks from me in Nashville. I was wondering if it was any good. I'll have to try it... Is it mainly like a dinner place that you eat in. or is it more of a fast food place. with pretty quick take out etc?
Tostada=flat fried crispy corn tortilla with refried beans spread on them. Toppings...lettuce, tomato, avocado, queso de vaca, meat choices--ground meat, diced fajita, chicken Burrito=refried beans and meat rolled in a flour tortilla, sometimes fried or baked. Taco=fried corn tortilla or soft flour torilla filled with choice of meat and fillings...lettuce, tomato, onion, avocado, cheese. If you really think that Taco Bell food is Mexican food, I've got some french bottled water to sell you.
Hmmm...I think I'll make some tacos when I get home...I need some avocado, tortillas from a tortilleria, I think I'll use cheddar cheese this time...pico de gallo...mmmmmmm...
It's more like a fast food place where you order your food at a counter. However, it takes about 10 minutes for the food to be prepared.
Back to Baja Fresh ... There was one a 10 minute walk from my apartment in LA. I always, always, always got the Ultimo Burrito with chicken and garnished it with the green sauce from the salsa bar. My favorite lunch while I was in LA. Love the Baja Fresh! Alas, there is no Baja Fresh here in Philly. But, somewhat randomly, there is one in DC at DuPont Circle. Every time I'm in DC I stop by. Thanks, RM95 ... you made me hungry for something I can't get in this town!
