Salmon w/ rice. make the following marinade- C soy sauce TBSP olive oil TBSP orange juice TBSP lime juice TBSP lemon juice half jalapeno red onion cilantro lots of fresh fresh garlic Put a filet of salmon into that mess, and bake a 350 for 20 minutes. Serve over rice with a heaping helping of steamed broccoli. DAMN, THAT IS GOOD. Yes.

Yes I am a b*stard, but cooking is generally an adult thing. So I cooked myself a chicken pot pie. pretty labor intensive, but damn good. the best descriptive word for chicken pot pie is Hearty. especially in the cold winter night (in NY) I cook for my brother myself my friends, and some lucky ladies. the guys are simple creatures like myslef, so burgers and pasta are king. but chicken with rice, or chile, or steak are all good. ladies get special treatmenbt(I will usually learn a recipy for them, its good to call their mom and try to make her favorite. Chile is my thing, as is Lazagna. and well fajitas are my specialties not a good cook, but passable, and improving. I think having a wife or kids would accelerate the learning curve. its just harder to cook for just 1 or 2 PEACE
I am not a great cook but Mrs. JB has suddenly become one. She never cooked at all but has taken up the interest and is really an amazing chef. Her specialty is baked goods. She could easily sell her cookies for a living. They are THAT good! When I cook, it is usually stuff like pasta or breakfast foods. Mostly, I'm just lazy.
The more I cook the more i realize how easy a lot of it can be. For instance, fish. Go to the store and get a fillet of something (Cod, Roughy, Monkfish, Salmon, Tuna, Catfish, Snapper, Swordfish, Mahi Mahi, Sea Bass, Halibut) and turn on your oven. Make it hot, you don't even have to worry about the damn temperature. Squeeze a lemon over the fish. Throw some herbs on top if you want it to look spiffy (just not the dried stuff - you can buy little packets of fresh herbs for less than a buck) like Rosemary or Thyme. The fish will really take on whatever flavor you use. Check it in about 7 minutes, if its not done (should be a little flaky) watch it closely for the next five and it will be. Buy a package of prepared (prewashed) spinach (usually in the salad section). Throw it in a pan with a little water and in about two minutes its cooked down (not so far that it looks like the canned ****). Drain and plate it. Set your fish on top. Throw a raw sprig of whatever herb you used or a lemon slice on the side of the plate. Boom. Looks great, tastes great, mucho healthy (except for the catfish) and you look like a stud to your lady. Really you can do the exact same thing with chicken breast. Pork can be a little tougher if you don't cook it right. Its amazing what you can do in no time at all, with very little effort.

I cook over 95% of the meals that my wife and I eat at our house, and I've been cooking since I was about ten. It's my biggest passion. I hate to list my specialties because they're all so fattening...like fried chicken or cheese enchiladas. I cook everthing from country cookin (fried chicken, brown gravy, mashed potatoes, blackeyed peas and mustard greens might be my all time favorite meal) to more new-fangled (and healthy) dishes like grilled chicken marinated in soy sauce, honey, and pineapple with grilled pineapple slices on top of coconut rice (that's my own creation, so I'm not ready to give up the recipe). I also do things as simple as homemade mac and cheese to more challenging dishes like homemade tamales, smoked Polish sausage (all Pole's should grind their own pork butt's, mix in spices by hand, stuff the whole mixture into sheep intestines and smoke their own sausage), and I've even rolled my own sushi (though I have to admit....that must take more practice than I was willing to give it). Looking at the preceding paragraph.....it all seems so inadequate. There are so many things I've tackled in the kitchen, I could write a book. A cookbook. Do I consider myself a good cook? I think my talent in the kitchen was God's greatest gift to me.

If its anything really complicated, I really screw it up, and for some reason, breakfast foods are a puzzler to me. If its relatively simple, and has a clear recipe, I can make it. I also tend to spice things up a bit more than most people like.

I can't stand cooking up a little something just for myself. Usualy when I cook its a long, drawn out, expensive affair. Also, it's usualy incredibly unhealthy, and an incredible mess when I cook. If I'm not going to eat out or eat frozen stuff, I'm going to do everything up from scratch. This probably comes from my mother, who grows basil to squish up into fresh pesto with pine nuts and imported cheese that she gets cheaply at Antone's. what did you cook for dinner tonight? I didn't. what is your specialty? I make Veal Scalopini Marsala, which is like little meat filets, pounded thin & sauted, then cooked in a roux made from marsala wine which is sort of a red sherry, and loaded down with lots of mushrooms, with either some fresh garlic mashed potatoes, heavy on the cream and butter, or fetuchini alfredo, again don't spare the cream. When there's fresh corn in season, I really love to make a big 'ol pot of fresh Corn Chouder (not that nasty tomato Manhatan Crap') loaded down with lots of bacon and potates. I end up baking up a recipe for 'Redeemer Bread' which my mother clipped from the Chronicle many years back. It's a big heavy bread loaded down with wheat germ that goes nicely with the chouder. Chicken Tetrazzini is about the easiest thing I know to make. I really like it, too. Cassarole of chicken, pasta, & mushrooms named after a 19th century Opera star. Finally, the other thing I make is a recipe for pasta with a caramalized onion sauce that I yoinked from the Moosewood Cookbook. It's got many, many, onions in a sauce made up of chamgaigne, arrugula, and feta cheese over some little fusseli type pasta. It kicks @ss. do you concider yourself a good cook? All flash, no substance. I can make something nice occasionally, but I never clean up, I spend too much money, and I only want to do it once in a blue moon.
