Not necessarily a Texas thing, but more of a Southern thing. I will order fried pickles EVERYTIME they are offered.

Pappas BBQ has great spicy rice and macaroni sides; makes up for the staff-wide early onset dementia.
Fried pickle spears from Katz's. Fadi's muhamarra... if it was even half way appropriate to demand one of their oversized plates filled with a just a single appetizer, I would do it.
Chips and Salsa/Queso are my go to. Then it'd be garlic bread or bruschetta. Maybe some onion rings, fried calamari, wings, egg rolls, quesadillas.
Oysters w/ cracker and hot sause. Spring rolls (pref. homemade) w/ vermecelli noodles beef pork or asian ham. Dip in peanut sause or fish sause. My favorite. Dumplings. Dim Sum. My god asian mans dream food here. Especially in Houston. I like the white stuff with meat inside idk what's it called but any dim sum that has that is amazing. Dip in soy sause. Vietnamese sandwich (some pork inside a French bread) pate, pork, butter, soy sause, my god another favorite. Jeez I'm getting hungry.. Boston Market's cornbread. Holy mother of pearl. These go up like hot cakes. If buy boxes of these not really an appetizer but my oh my.. Eat it with boston markets chicken. Later I'm out going to go eat now.
Chips and the red salsa at Cyclone Anaya's. For whatever reason I really like their red salsa. Fairly spicy, but not ridiculously spicy.
Well when I said "I make" what I really meant was "my wife makes and I eat". I'm sure she got the recipe online somewhere and made some subtle adjustments. They resemble Hooters if I had to pick a place, but I haven't had theirs in a while so it's hard for me to say for sure.
