If you're only making minimum wage, it's really hard to buy fresh fruits and vegetables. You are more likely to resort to value menu at mcdonalds. Now that being said, there's plenty of facts about the wealth of african americas and hispanics.
I think there is definitely something to this and a lot of what is considered specific cultural food among these groups is really poverty food that their ancestors were forced to eat. Another issue may that historically these groups put up with a lot of privation and in some ways are making that up with very rich food.

That could be a different topic altogether. While American/western culture celebrates the rights of the individual, the non-western world enforces a stronger emphasis on community and tradition building. At that point, the person making that decision would also be forced to make a decision on to who they associate and with whom they identify if not subconsciously from the start.
Food pyramid is wrong and it's been changed to the food plate. Brown rice doesn't cause as high a blood sugar spike as white rice does. High blood sugar spikes leads to fat deposit. He was right.
food plate is wrong too. Still has lots of grain. 45g of carbs for 195g serving size for brown rice. 44g of carbs for 165g serving size for white rice. They are pretty much the same and both will make you fat. Brown rice will definitely make your sugar lvls spike.
Only 11% of asians are obese and they eat the hell out of rice. It's about portion control and staying off fast food. I don't need gimicky new diets.
I've lost 40+ lbs and kept it off for 1.5 years now. I eat the hell out of carbs. It's about portion control and eating things that satisfy you, yet are relatively low in calories. One of my go to staples during the weight loss phase was a bowl of brown rice, black beans, and a little bit of chicken.
Looking through your back and forth with other posters it appears you've completely disregarded the high likelihood of bulk fresh foods spoiling. A typical family will have to toss various veggies/fruits/meat out if they buy it fresh. The only way to eat meals consistently cheaper than a couple value menu burgers or tacos is to purchase canned and frozen foods and it's questionable how healthy those options are. Also consider, for most people, taste trumps everything in food. If a delicious meal of Alaskan Salmon and a salad with various fresh veggies is an option many would take it. But, if it's between frozen veggies/meats that have poor taste/texture and a burger many will choose the burger. I don't think he was placing blame. I doubt you'll see many black people that blame whites for their diets. It looks like rocketsjudoka was describing the origins of a culture's food, which was spot on by the way. If anything, those that understand the origins of their culture's food are enlightened enough to not eat that crap or at the very least eat it sparringly.
I purposely did disregard the externalities of ingredient ownership. One of the biggest issues the poor face is that many uneducated families migrated into urban centers to make great wages working in industry, but the industries left and there are no farms for them to return. The affluent can afford fresh food while the poor barely have adequate access to it. But on the cost basis of fast food vs home cooking, a family of 5 can cook the meal for a better price then having it at McDonalds.
Carbs are not all the same. There's a difference between which types of carbs you eat and how your body processes them. Read up on glycemic index, how it relates to fat deposition, and complex vs. simple carbs. If you want a healthy diet, the Mediterranean diet is pretty well-regarded as one of the best non-fad diets to follow. Whole grains (not processed), fruits and veggies, fish or chicken, healthy oils e.g. olive oil, and less red meat.
US food policy since the 20s-30s has prioritized quantity over quality. It has created an environment in which people, particularly low-to-middle income folks, are incentivized toward unhealthy food choices. Obviously, there is an aspect of individual responsibility, as lack of physical activity and overeating certainly play a role, but there are systemic problems as well.
How dense is a piece of meat, how filling? Then compare that to highly processed grains such as pasta, and see which has a higher calorie and carbohydrate rate. Insulin and how quickly your body processes a particular type of food matters as well. High carbohydrate items make your blood sugar to spike, which causes weight issues and how your body processes carbohydrates. Further carbohydrates are addictive based on your blood sugar spikes and how they are processed, which causes over consumption. There has been a lot of research on the top in the last 3-5 years which is pointing towards a revolution away from calorie counting and a consideration of net carbohydrates.
Look into the history/study of the Mediterranean diet. There has been single, very limited study. I suspect the key is fresh whole foods, relatively stress limited environments and an active social life coupled with non strenuous but constant physical activity yield the best results.

When I was a full on, 100% vegan, some old black folks laughed at me or was completely puzzled at my food choice because they just couldn't understand why I, a black youth, wouldn't eat like the typical black person (not even to the extreme either), which in turn made me roll my eyes because I take pride in my research and trying to eliminate nutritionally poor food from my diet. That's not necessarily to say being a vegan is the way to go more so than to say "seriously, because I don't eat the fattening crap most of you eat and end up in the hospital/dying over slowly and painfully, I'm not right somehow?"
