I have been trying to eat healthier, at least a little bit, but always run out of ideas on stuff to make at home. Especially for lunch. What do you guys cook at home that is relatively healthy? No microwave meals please! The more flavor the better too.

Just eat less of stuff that's "bad" for you, I always say.

If you cook something, you can grill... like, CHICKEN... grilled is better than fried. I've been grillin' lately. Then I sllice the chicken, lay it over some SALAD, and yuuuuummmmmy... nice. Try salads.

Falafels are easy to make and healthy.

    So is hummus and bread.

I make some eggplant/bellpepper sandwiches with vegetarian cheese that is good on the calorie counter.

Get a salmon fillet, put in baking pan, lightly spinkle lemon pepper on it, cook 20 minutes and you're done. Salmon is one of the healthiest things you can eat. Buy wild if you can. Tastes even better on the grill. I usually grab a few cedar leaves from one of my trees, throw them on the coals and cover to smoke with the cedar flavor. Very easy to make, hard to screw up.

Yea, I make the falafel balls from the mix they sell at the Phoenicia Deli grocery store. Just add water to the mix, and then fry it in olive oil. Make sure its olive oil, as that is healthier.

Make sure you don't fry in EVOO. I have read quite a few journal articles linking frying in EVOO and some cancers. EVOO also has a really low smoking point, which can potentially cause fires.
