I actually bring a loaf of bread, some sandwich meet, a couple slices of cheese, etc. to work on Mondays and put it in the fridge. I would make my sandwich during lunch and bring the stuff home on Fridays.
Hummus on celery stalks is a refreshing alternative. Make a fruit salad on Sunday and it will last a few days to take for lunch. You can go as exotic as you like-- put a little yogurt-honey dressing on it with walnuts. Yum... Go to Sam's and check out their food. I bought a three pack of olives last month: black Greek olives, green olives stuffed with jalapenos, and green olives stuffed with blue cheese. A few of those as a side dish will give any baloney sandwich new life. Grill some chicken and marinate it in ginger dressing. Great served cold.
Take some foccacia, spring mix, turkey, cucumbers, & red or white wine vinegar. You can cut up the bread, and make sandwiches that you induvidually wrap and put the vinegar in some other container. You can do it on the weekend and the sandwiches hold up in the fridge all week.
Case in point...I spent $10 for lunch today (Chicken Fried Chicken, Mashed P's, Green Beans and Texas Toast...yumm...However, it was big enough so I can have it for dinner...Also, my Tuesdays are Hooters, but they actually have a great Fish sandwich... I need to lose a couple pounds, so starting next week, I'll start taking my lunch 3 days a week...baby steps...
Usually I grill up some chicken breast on sunday and make a big pot of brown rice an eat that for lunch everday. I'm usually sick of it by Friday so I'll treat myself to a big Chipotle burrito.
I eat the most boring lunches everyday- cheese and crackers, a can of tuna, some almonds and an apple. I would rather not spend any unnecessary mental energy thinking about something like lunch at work. On the plus side, it's cheap!
Almonds and walnuts are smart additions to lunch. Just a handful makes me feel full, and you can eat them anywhere, anytime.
get a sandwich maker and make some grilled cheese with ground beef, etc inside. You will love them and they are not messy.
Someone mentioned yogurt- I like the lite flavors- orange, blueberry, and strawberry. Seasonal fruit is good-right now. New Zealand Comice pears at HEB / Central market, red seedless grapes, Texas peaches. A tip for ripening peaches- put in a brown paper bag for a day to ripen. If you buy a roasted chicken at the supermarket - you can use it for chicken salad or sandwiches. I like tortillas or Pita bread as an alternative to regular bread. I do like oat bread. Avocado, turkey bacon - or regular bacon with purple onion make a good sandwich. I also like the bagged albacore tuna with green olives and soy sauce or ranch dressing. I like peanut butter sometimes with bananna. I have been brown bagging for years-saving money and eating healthier. I am not stressed hurrying to a restaurant either.
Wheat Bread Baked Ham or Smoked Turkey Apple Banana Once or twice a week, I add a side from the cafeteria (pasta, rice) for $1. I was spending $5 or $6 per day, and bringing my lunch cuts that at least in half. That saves $50 per month.
All I have to do is have the willpower to avoid buying the pudding parfait cups at work. Damn, those things are good.
Today i brought some leftover baked chicken and green peas. It's tough getting back into the habit of eating healthy again. It takes a few days for the body to adjust, so until then I constantly feel hungry.
C'mon guys with all your exotic lunch meats. When I was in Chechnya all I had for one full year was my cases of peanut butter and bread. No jelly even!
