Reading The China Study: The Most Comprehensive Study of Nutrition Ever Conducted has inspired me to eat a plant-based diet for a while. Does anyone have any good vegetarian or vegan recipes they would like to share? I'm looking for dinner recipes mainly, and things that are affordable on a student's limited budget.
Not to discourage you but I was a lacto-ovo-vegitarian in college for about a year and it was almost impossible to get enough balanced protien. You really need to plan your meals in advance quite a bit. I'm sure it's possible, but it's more work than I was willing to do at the time. A quick check confirms that the amino acid taurine is the issue. Black beans and Chick Peas (or Garbanzo Beans) are the remedy. Many of the "high protein" lacto-ovo-vegitarian foods have no taurine at all, like milk or eggs, etc. Make sure to schedule in black beans or hummus regularly.
You need to watch out for B-12 too. Best way to get it's by taking sublingual vitamins. If you don't take them sublingually (letting them dissolve under your tongue) the B-12 passes through your system before it breaks down into a useful form. That's true also of almost all vegetarian/vegan B-12 food sources. The diet's really not that hard to keep up if you don't have to eat out all the time. I've been vegetarian 19 years and vegan 12 years and I've never had any regrets. Welcome to the club. Hope you stick around.
ugh, my friend has just decided to become vegan... i made her eggplant cookies the other day, but it didn't turn out so well. i'd give you the recipe, but i don't have anything against you.
Eggplant cookies? Damn, dude. What did you have against her? Mud and sticks are vegan too. That doesn't mean vegans should eat them.
I never was able to maintain a veggie diet, but I do use a juicer every day and it will have an immediate impact on your energy level. My favorite combination is a mixture of organically grown carrots and apples 50/50. Juicing helps purify and detox the system as well.

Orient Express Accidental-Occidental Spaghetti 1 pkg. rice vermicelli (or rice stick noodles) 3-4 medium "vine ripe" tomatoes -- cut into chunks (skins on) 3-4 cloves garlic -- minced 1/4 white onion (not sweet/1015) -- chopped 4 stalks green onion -- cut into 1" pieces 1 teaspoon fresh ginger root -- minced 1 jalapeno -- de-seeded and finely chopped 1 avocado --sliced black pepper cilantro -- finely chopped 1 lime -- (2 wedges) olive oil soy sauce sriracha cook noodles. put enough olive oil in pan/wok to completely cover surface and heat (med-medhi) when oil is hot, add tomatoes, garlic, white onion, green onion, ginger, jalapeno. cook long enough for the fruits/vegetables to become soft, but don't overcook. the water from the fruits/veg wil mix with the oil to make a sauce. add a couple of pinches of black pepper, 1-2 tablespoons of soy sauce and a few squirts of sriracha to the mix. cook about another minute. in a bowl, place a layer of noodles on the bottom and cover with the mix. place a few slices of avocado on top of the mix. sprinkle with some fresh cilantro. squeeze juice from one lime wedge over the whole thing (or, serve on the side so the person eating can choose whether or not to use it.) eat. with chopsticks.
