I think it's a nice idea too. But, this is the first thread I've seen about it. Just as well, though, as this is the only thing I have a recipe for (but it's always a knockout at holiday gatherings). Super easy... Jalapeno Corn Casserole 4 cans corn (drained) 2 8oz. packages cream cheese 2 2/3 sticks butter 4 fresh jalapenos (finely chopped) 1/3 cup milk 1/4 tsp. garlic Melt butter and cream cheese over low heat. Mix in milk, garlic and jalapenos. Mix in corn and pour into casserole dish (I use a deep, round one -- baking time may be different depending on the dish). Bake at 350 for 45-60 mins.
Zuchini with tomato sauce-from Thanksgiving 2005 Select 6 to 7 zuchini - ea about 6" to 7" length Cut off ends - cut in thin slices like a coin if possible-I did not peel Put the cut zuchini in a covered dish with olive oil - 1 to 2 Tablespoons evenly applied. Add some no salt seasoning like Mrs. Dash, some fennil, and ground black pepper-leave in ice box to be quick stir fried following day On day you want to prepare: For Tomato sauce- cut up 1/2 med yellow onion and 1 teaspoon minced garlic- more if you like -I use about a tablespoon. Cook in skillet until onion is carmelized and soft Add 2 cans chopped tomato- ea 14 1/2 oz add 1 can original rotel tomato-if these Rotel tomatoes are not available outside Texas - use regular canned tomato and add chopped jalapeno to taste add 1/2 cup red wine and 1/4 cup chopped fresh basil if available simmer the sauce in the skillet at low temp -allow the flavors to blend and wine to cook off-keep this warm to hot to serve over the zuchini ***************************** TO cook zuchini - -put 1 tablespoon olive oil in skillet heat to medium heat- add 1/2 chopped yellow onion and 1 teaspoon minced garlic-cook onion til soft Add the zuchini to the pan at medium heat and stir fry for 60 to 90 seconds-do not overcook - it should still be crispy put zuchini on serving dish and top with the tomato sauce This was a side I fixed on Thanksgiving to offset so many starches-potatoes, dressing, rice, etc.-this is easy to fix and everyone liked it. I added no salt and the olive oil is better than butter cholesterol wise. Tomatoes are good for prostate health.
I do not know if this really counts as a side, but it is easy: Baked Potato soup 1/2 medium yellow onion, chopped (about 3/4 cup) 3/4 cup chopped celery 1/4 cup butter or margarine 1/3 cup Flour 1 quart chicken broth 2 cups half and half 8 medium potatoes, baked until tender Seasoned salt to taste garlic pepper to taste 1 1/2 cup shredded cheddar cheese( I use the Extra sharp cheddar) 1 1/2 cup crumbled cooked bacon 1/2 cup finely chopped green onion In large pot, cook onion & celery in butter over medium to low heat until tender. Blend in flour until smooth; cook one minute, stirring with wire whisk. Slowly whisk in chicken broth and half and half until smooth. Continue to heat and whisk over a low - medium heat until mixtrue boils. Boil, stirring for one minute. Reduce heat to low. Add potatoes. Season to taste with seasoned salt and garlic pepper. Heat through a few minutes. Serve the soup with a garnish of cheddar cheese, crumbled bacon and green onion. This was a potato soup I remember my grandmother made when I was little. She never wrote it down and I made it first from memory. When my son was small he gave it the "baked potato" name.
I'll help out here. VooDoo Skillet Potatos. The night before bake 2 large potatos then after they finish cooking put them in the fridge over night. Thinly chop some sweet yellow onion, half as much green onion, and a couple cloves of garlic. Slice the potatos 1/2" thick to make round "wheels" Over medium heat, melt one stick of butter in a large cast iron skillet. Brown onions in butter until half way done, Add potatos and garlic and cook until everything is browned. Serve with favorite Meat dish... I like mine with Steak.

Grilled Vegables Soy Sauce Sesame Oil Sriracha Chili paste Grated Ginger Grated Garlic Vegatbles - Broccolli, Carrots, Asparagus, Zucchini, Green Peppers any kind of firm vegatable. Mix soy sauce and sesame oil in a ratio of about 4 parts soy sauce to one part sesame oil add the Sriracha chili paste, grated ginger and garlic to taste. Cut up the vegatables into pieces that are not more than 6 inches long and at a minimum of a 1/4 inch thick so they can cook through but not be so thin to burn or fall through the grill. Dip the vegatables into the soy sauce mixture and coat evenly. Heat up the grill and place the vegatables on to the grill and grill until the edges start to char. Make sure to turn the vegatables at least once. Don't cook the vegatables until they start to burn through and its better to undercook them than overcook them. Serve hot. The vegetables can also be put onto skewers and grilled. I personally find the vegatables cook better in individual pieces. If you're going to skewer them coat the pieces first in the sauce and then skewer them so they coat more evenly.
