    Restaurateur Mama Ninfa dies

    Houston's first lady of Mexican cooking, Mama Ninfa Rodriguez Laurenzo, died of bone cancer at her home Sunday night. She was 77. During her five decades in Houston, the founder of Ninfa's restaurants was credited with expanding the food frontier here by introducing the taco al carbon, later repositioned as fajitas.

    Mama Ninfa will be missed. Although after her company declared bankruptcy and was sold. The original location on Navigation never seemed to lose it's authenticity, in my opinion. After the Ninfa's situation, The Laurenzo's opened El Tiempo on Richmond and I hear the food is really good albeit a bit pricey.

    What a wonderful woman. My favorite Ninfas is the 10700 block of Westhiemer near Wilcrest. Ninfas makes the best flour tortillas. Also, that goop at the bottom of delivered fajitas after put in the fridge ovenight, "I crave it every forthnight".
