favorite home cooked meal

    what is your favorite home cooked meal , it can be from child hood, or what your wife makes. mine was my mom's chicken fried steak, no restaurant in the world could top that. but i dont eat red meat anymore. so whats yours?

    my sister's tuna fish casserole...no really!!!

    I've been making it since I was 13 yrs old, when she recruited me to help in the kitchen.

    this isn't a joke, tuna fish casserole! yumm yumm. warm's the heart!

    My parents make great homemade foods including:

    1.) Spaghetti
    2.) Mango Chutney
    3.) Jalapeno jam
    4.) Mango Salsa
    5.) Stir Fry Chinese

    My Mom makes her living weaving rugs on big looms so she attends a lot of arts & crafts shows and the like. For a while, my parents made items 2-4 above(and other edibles) under their own label and sold them at these shows along with her great rugs. She sold out of that stuff every time. I was lucky to get some for free. I love that chutney... mmmm. They made some good money on that stuff in the process. I'm hungry, now. Damn!

    Fried Chicken, rice and dark brown gravy, mustard greens, black eyed peas, and fresh bread.

    Damn, I read that, and I realize, I should invite Chris Webber over. Both my parents are white, but my dad's parents where share-croppers; he left school in the fourth grade to pick cotton. Of course, he was born in 1919, so that was smack dab in the middle of the great depression. Anyway, my mom is 3/4 Canadian French and 1/4 Canadian Indian--her new inlaws had to teach her how to cook all of that stuff.

    I can cook it all too now, so if I'm feeling a bit decadent, I'll make it....even though there ain't none of it on anyone's diet.

    My Mom's Green Bean Casserole rules!!!!!! Granted, it's pretty easy to make. It's awesome though. I'm glad she taught me how to make it before I went off to school. I've become a pretty darn good cook. No need to be modest. I should drop out and go to Culinay School.

    Right-wing Reactionary Republican Flambe'!

    Seriously, my favorite home cooked meal is my sister's "oven-fried" chicken recipe that I have stolen and altered over the years. It goes like this...

    Dip chicken pieces in beaten egg and then coat them in Progresso Italian style bread crumbs. Arrange the pieces on a baking sheet or broiler rack. Sprinkle a moderate amount of black pepper on each piece (I'm a spicy food guy, so I coat the sumbitches!). Bake at 375 degrees for 30 minutes, turn the pieces over, sprinkle an equal amount of black pepper on the other side, and bake at 375 degrees for another 30-40 minutes.

    The chicken comes out crispy on the outside and juicy & tender on the inside. Tastes great with greens or blackeyed peas. YUMMY!

    My favorite would have to be my Mom's sausage biscuits and gravy.

    Close on that list is my girlfriend's "Bunnies Potatoes" which consists of potatoes, cheese, sourcream, a lot of butter, and stove top.

    Ummmm.

    Hey RM Tex-
    "Oven-Fried" Chicken also works well if you marinate it in buttermilk before. I like to do it for about thirty minutes so that it is good and done. I also like to sometimes use pretzels instead of bread crumbs. Gives it a different flavor.

    Green bean casserole is very good. So is tuna casserole.

    hmmm, my favorite is just about anything my momma makes. Or me for that matter since I have all of her recipes. [​IMG]

    My absolute favorites are Strawberry Feta Cheese salad with homemade vinagrette. Oooh, and my cherry pie. I also make a mean pear and ginger pie. And brownies.

    Geez, now I really am hungry so I guess I have to go to the grocery now. [​IMG]

    Here ya'll go. Enjoy!

    Strawberry Feta Salad

    1 large head Boston, Bibb or Romaine lettuce, torn

    1 pint strawberries, stemmed and quartered (note: raspberries, blackberries and blueberries can all be substituted)

    1/3 cup feta cheese

    Mix up the salad part. Great with pork, chicken, or fish.

    Vinagrette:
    1/2 cup sugar
    1/2 tsp. salt
    1/2 cup white vinegar
    2 cloves garlic, crushed
    1/3 cup vegetable oil
    1/2 tsp. paprika

    Dissolve sugar in vinegar over low heat. Cool. Add remaining ingredients and chill. Pour over salad and toss.
