Oh yeah, my grandma (101 now) threw down some King Ranch back in the day. To be fair, my wife can throw down some delicious leftover slop in a pan, so much so that I used to say her kung fu name was One Pan. She could probably quickly convert her creations to a delicious casserole.

That's like my Tortilla Delight recipe except mine has crispiness with the chips and layers. I use ground turkey. but, the cream of chicken/mushroom soup is key flavor. that's why i was so pissed about the new healthier ones losing the flavor. but, i did buy some Kroger store brand cream of chicken/mushroom soup. i think i may have the ingredients to make above but it's so much like the Tortilla Delight. The difference is mine uses flour tortillas and tortilla chips and this one uses corn tortillas. lol
Do you buy the Stouffer's Chicken Enchiladas Casserole mostly because it is convenient or do you really like it and just wished that they would be more generous with the Chicken? Have you thought about taking a picture of the ingredients listed on the side of the package and coming up with a Copy Cat of their Recipe? Casseroles tend to share core concepts of A Protein (with some exceptions) Starch (rice, pasta, potatoes, bread crumbs etc) Liquid (Cream of Something, pasta sauce etc) Other ingredients to add flavor Prep what needs to be prepped before going into the Casserole Dish, Sometimes Cheese Combine in large pan or casserole dish Put it in the Oven
they are skimping on the chicken to improve their profits. So, they grind some into a mush and add filler ingredients. I usually buy it when it’s on sale only.It’s not a casserole per se but maybe it should be labeled that as it’s more casserole than chicken enchiladas. It tastes decent and is good for when you want a break from cooking. But, I do make my own as well.
