Oil prices will spike if Iran successfully closes off the Strait of Hormuz or destroys the Gulf states output which would result in the US/UK and France to intervene to reopen/protect. But in an open conflict between just Israel and Iran, there is no reason to do either. Key here is the closure needs to successful to affect prices. Iranian oil is otherwise stuck going to China who is already buying oil from other countries and is not dependent on Iranian oil. The global oil market adapted to not having Iranian oil from embargoes a long time ago. China rebrands Iranian oil to being Malaysian to avoid sanctions.
