Yes they are both healthier because the fats are non-trans and get passed through your system quickly. Also they have a higher temp viscosity, allowing you to sear let's say a tenderloin filet at 600 degrees to seal in the juices without scorching. You can then reduce heat and add your rosemary and some port wine to make a nice reduction. But it is not intended for deep frying. Deep Frying oils have what are called double bonds to keep oil breakdown at a minimum. These are what you need to avoid. the healthiest deep-frying oil is Coconut but take into account you cannot heat away allergens. So, if you have a tree nut allergy coconut can set someone off. coconut just became populated on the tree nut list. Also believe it or not, grass fed beef lard is a new healthier concept, but the oil can have taste difference depending on the food the animal has eaten. Grass fed lard is the new trend. Both are expensive though. Here in Albany NY, there is a zero trans fat law for restaurants. So you can't use any trans fats oils for cooking unless you were grandfathered in because your business has been here using specific oils for a certain amount of years. Also, on a side note. We can only have paper straws here which is good for the environment, but they stick to your mouth. I keep a stainless-steel reusable straw in the house for my Tito's big boy drinks and one in the car in case I find myself at a sub shop or God forbid a McDonalds.
