"Kartoffelsalat" - very different regional variations. Some with mayonnaise, some with oil and vinegar. Oh, also, I like Kaiserschmarrn. If anyone knows what that is. I also like Croatian food very much. To my disdain, I realized that there is not a single Croatian restaurant in all of South Florida, which is pretty crazy. I'm sure authentic Croatian food would be popular here. Another very German thing about me: During "asparagus season", I love to eat lots of white asparagus.
I ****ing love asparagus. Roasted/grilled for a minute, with salt/pepper/oil/lemon. I've got a bed of them in my garden, and they're a great snack to just snap off and eat raw. German potato salad in Texas is warm, oil/vinegar/a bit of mustard/bacon crumbles I've never had Croatian food, never thought about it, and I will now be googling things
Honestly it sounds like you eat plenty but just have vegetarian tendencies. If it interests you, expanding your palette doesn't mean eating the craziest things you can find. Just the next step over... like if you like beef, try bison/buffalo. It's pretty similar. There's still a few steps to get to escargot lol I've had the nicest escargot there is and it still tastes like a sandy booger no matter how much butter and garlic you cook it in. Try the buffalo ribs, they're magical. Even for beef there are expansion like lengua tacos or oxtail. Beef cheeks! Done well they just melt in your mouth. So, so good.

Yes asparagus is amazing and potato salad made that way is probably the best way, mayo based is no good.... I'm not a fan of mayo in potato salad (not really a fan of mayo in general, haha)
I like the stuffed peppers. I also like Djuvec rice and Ajvar, and the spicy onions (not sure what they are called). There is a steak dish called Veseli Bosanac. As a child, I liked the Raznjici skewers. Pljeskavica is a popular dish, as is Cevapcici.
I think escargot is a texture miss for me. Oysters too. Believe me I've tried em enough, one of dad's favorite dishes. AtW showed up to say he was picky, now he's expanding my cuisine knowledge. I definitely don't know enough about German, Eastern European, even South American cuisines.

Not a fan of hard boiled eggs in anything. They are slimy and taste like eggs. But I’ll eat potato salad with mustard or mayo.
