I eat a lot of broccoli, and I definitely need to spice it up. Maybe some new seasoning. I have a roasted cauliflower recipe I brought everything for and have yet to make. Mostly use it for rice.
I have a secret love for overcooked, mushy, super-salty green beans like you used to get at Luby's. Dont judge me.

Roasted Brussels sprouts are a staple for me. Roast them at 400 and start looking at them about 20 minutes in. Just do olive oil, salt and pepper. Once they're finished, stir in some balsamic vinegar and top with toasted walnuts.
I want to try brussel sprouts, but they intimidate me. Also, want to give butternut squash a try and collard greens. I can only do spinach raw.
One of my favorites is spinach and mushrooms with balsamic Fresh spinach and mushrooms Balsamic vinegar Olive oil chopped garlic salt and pepper Combine olive oil, balsamic vinegar and garlic in a big bowl. Whisk the ingredients together. Add mushrooms (I quarter or half them if they are big) to the mixture and marinate for a bit. Melt butter in a skillet over medium-low heat. Stir frequently and cook until the butter turns brown and has a pleasant aroma, taking approximately 5 to 8 minutes. Remove mushrooms from the marinade, reserving the marinade, and add them to the skillet. Cook for around 2 to 3 minutes, or until they begin to soften. Add spinach and some of the reserved marinade. Lower the heat to medium-low and sauté for 20 minutes. Season the mixture with salt and pepper.
Bacon is fine, but I don't need it in my vegetables. Roasted Brussels sprouts are a great flavor on their own.
Anybody got a good veggie burger recipe they care to share? My current veggie burger uses the main ingredients of...pulverized in a food processor (preferrably)...one roasted eggplant (roasted at 400 degrees for 30 minutes...insides spooned out), a can of white beans (drained/rinsed), four to six tablespoons of bread crumbs, one red onion, two to three cloves garlic, teaspoon of cumin, two tablespoons of za'atar spice, 1/4 cup chopped fresh parsley, salt, pepper. I've added mushrooms the last time I made it as well. Then, I just store it in the refrig. I make a patty or two frying in avocado oil. Best to make thin patties as some of those ingredients need to cook some (or I guess you could pre-cook the onion, garlic, etc.) while you get a good brown crust going. It looks kind of like a cooked beef burger when you are done. Anyway, I like my resulting veggie burger with lettuce, tomato, and mustard. It's a pretty good burger substitute. But, I feel it could be better. I dunno. I also do a very light version of eggplant parmesan where I go easy on the sauce and cheese but do the whole flour/egg wash/breading/fry in avocado oil thing. It's really nice...like appetizer bites.
Mushrooms: I can eat them just about any way, but my favorite side with roasts/steaks is to sautee them a bit, then add fresh thyme, garlic, beef broth and red wine, let that reduce and enjoy. Have you ever stuffed portobellos? That's an easy one. I like wild rice and a bit of hot italian sausage, with garlic and onions and parm and whatever else I feel like throwing in. I don't eat cooked carrots, unless in a soup. Raw carrots are great. I eat a lot of simple roasted cauliflower/broccoli/asparagus, which is basically just season them however you want and throw them under the broiler. I eat a ton of baby spinach, but it's either raw or just a simple saute with some garlic. Outside of sauerkraut, the best cabbage I've had was by coring out a head, sticking a stick of butter in the hole, Tony C's on the outside, wrapping it in foil, and putting it on the smoker while bbq'ing. Shockingly good. I know my mom makes a great spicy cabbage slaw whenever she makes fish/shrimp tacos. I'll try to get together some recipes, between me, my mom and my brother we've got some quality ones: ratatoullie, okra/potato/tomato skillet stuff, butternut squash casserole, roasted brussels sprouts, etc... eta: if you don't have a can of Cavender's Greek Seasoning, invest in one. It's great on veggies
