I made super veggie eggs today in honor of this thread. Three eggs instead of my usual four. If you mix in sour cream you can cut even more egg out.
Some interesting math I just read about. To keep egg stability, you basically want one hen laying egg per person in the country. That would mean you'd want at least ~330,000,000 hens. The current bout of avian flu has killed off 55,000,000 hens and we're down to 300,000,000 million hens. Additionally, a push by some legislatures for hens to be "cage free" not only raises egg prices in general, but makes hens more susceptible to getting avian flu, making the current situation worse in states like California that have that legislation.
"Super veggie eggs" sounded like you were making those "I wanna remain vegetarian, but live like the dark side does" foods. Like Beyond Meat or something. lol. There are "veggie eggs" out there made from tofu or flour, etc. I thought you were eating that stuff.
