    Gochujang on ribs sounds kind of like a loose take on galbi. Sounds intriguing enough to try at least once.

    Stopped at Moreno BBQ in Austin. Was pretty good, but I was surprised by the $30/lb brisket cost.

    I think it's been that way at many places. I was more shocked when I finally started seeing prices starting to come down. I think it was something $30-$34/lbs at a few places around me. Those same places are "down" to $24-$27/lbs lately.

    Fertitta was on CNBC earlier saying prime beef was the most expensive item on his restaurant menus, which I guess may not be saying much, but he was saying consumers need to be patient when they see $65-$70 steaks on the menu.

    The DFW area's first HEB just opened up by me (and brought with it, the ensuing chaos where people think it's the grocery holy land), and they had choice boneless ribeyes for about $5/lbs. Hmm... choice ribeye at home vs prime brisket at a restaurant for their respective prices. I'm taking that ribeye (though I didn't buy any).

    Cook that choice brisket for 14 hours and it’ll become prime.

    So I went to Gofdees and Cattleak bbq in the DFW
    They ran out of everything except for brisket I showed up like 30 minutes before they open and then waited like two hours
    It’s excellent and it’s got the Franklin bbq vibe
    The place itself is bare bones

    Cattleak was great too and the place is nicer with all the murals . The brisket was not as good as Goldees but really excellent , the sides are better here

    Overall, great options , I want to get ribs at Goldees the next time I show up

    Oh I can't, I'm the low man on the totem pole in the industry (commercially, anyway). You might want to talk to the 2 or 3 conglomerates that control the wholesale packing end of things. I'm pretty sure they're still actively being sued by the government for collusion.

    Lulz and the HEB chaos. I’m not a fan of their Prime 1 brisket. Not much quality control, I think. The Nolan Ryan Angus “34 Prime” at Krogers is the way.

    I think Krogers has an exclusive deal with 34 Prime.

    Looks like nothing but family violence in Lockhart with Smitty's vs. Kreuz and now Black's vs. Terry Black's.
    The Terry Black's in Dallas is still one of the best BBQ places I've tried up here. They had great ribs and brisket, and the sauce was pretty good, too. About the only sucky thing is its location (not near me).

    Chisholm Trail is the "other bbq joint" in Lockhart nobody really talks about, but back a decade or so ago, most people would choose Kreuz, Smitty's or Black's over them. The good ol' days, when the best bbq in the state was in Lockhart (and Driftwood). Times have changed. lol.

    One big takeaway from that article is that Goldee's is looking to open a spot in Lockhart.

    I think the guys that started the one in Fort Worth worked at some of the best bbq places in Texas like Franklin, Terry Black's, Truth, Micklethwait, LaBarbecue, etc. It's no wonder they know how to make BBQ. I'm guessing they're trying to capitalize on their #1 ranking. It's crazy they've only been open for about 2 years, I think, and most, if not all, of that was in the midst of the pandemic. I still need to get out there and try it one day.

    Terry Blacks is better than Blacks
    Terry Blacks would only make Lockhart relevant again
    Kruez was the best last time I remember

    Austin has good bbq to the point nobody goes to Lockhart
