    Hey guys,

Fajitas - yep FAJITAS are one of my favorite foods and I have a KILLER recipe for cooking them - both Chicken, Beef, Shrimp and Vegan ones with Portabello mushrooms.

I have a mix of special spices I have acquired and mix in HONEY in the marinade to give it a little extra kick.

Anyone else love cooking the Fajitas and spreading the love?

What ya got? Care to share your secrets?

Pappasito's fajitas are marinated in basically half soy sauce and half pineapple juice for 18 hours. There may be a little lime juice in there too.

I'm grilling some beef fajitas tonight with my secret marinade. Got some refried beans going too. My marinade is cilantro, green onion, garlic, jalapeno, lime juice, and olive oil. I season with salt, black pepper, and toasted ground cumin (that I toast whole and grind in mortar and pestle). Then I take an immersion blender to that stuff. I'll save some to drizzle on after the meat cooks too.
