I'm a self admitted non-foodie. But I've been making scrambled eggs with mushrooms, onions and either salt and pepper or Tony Chachere's for years, and I'm a little sick of it. Please throw down your recipes for scrambled eggs (not sunny side, not omlettes) here. I need something to live for.
Google "French style" scrambled eggs. Really good scrambled eggs should be runny as hell and have tiny, tiny curds. First time I tried it they were so runny that I was afraid I was going to get salmonella, that's how runny. Fresh chives and a dolip of cream cheese (which doesn't seem as natural as a splash of milk or cream but does the same thing). America's test kitchen is awesome for actually testing techniques side-by-side to she what comes out better. I sort of had a scrambled egg obsession a couple of years ago and probably watched every scrambled egg video on YouTube. As far as recipes encorporating scrambled eggs, I've posted this before, but easiest scrambled egg meal ever. I don't even measure anything anymore. Buy a package of frozen spinach, a pound of ground beef and a carton of eggs and a tub of mushrooms. Throw everything together. Maybe top it with a little picante to give it some bite. As far as other people making eggs, I would really love to try this: That is 100% some freaky, nasty food p*rn with eggs. It couldn't possibly taste as good as Ive imagined it in my mind.

Eggs.... sour cream.... butter..... hot sauce.... fresh ground pepper and salt. Use a non-stick pan.... Turn the pan on low/medium Put several dabs of butter in the bottom of the pan.... cut a few others too if the pan gets dry. Take the eggs, crack them in a bowl and pour in a dab of sour cream for each egg. I personally then put a couple drops of thin hot sauce per eggs in the bowl. Then whip them with a good whisk until they are completely whipped. Pour it all in the pan and wait like 30 seconds and then start using a spatula to push the cooked egg parts into the center of the pan until the eggs are done. Then immediately put on fresh ground pepper and salt... and mix them up and serve immediately.
I miss the days of a non-personalized internet. As for eggs, I sometimes add about 1/4tsp of baking powder to 4 eggs and scramble/fold.

Yep. The local Mexican grocery makes the best chorizo I've found. Not greasy at all, spicy and delicious. Grocery store chorizo is, from what I remember, an orange oil slick with some meat. She let me help her butcher a hog one day. I asked how often she does it, she said 3 pigs a week. That's a hard working woman.

Good chorizo is hard to find, most of my experience with it in white people restaurants and stores was as you said, an orange greasy mess.
