I have you living in a rural area with the Bistro Chef and Cocktail Master information suggesting a metropolitan location for the business. If you are going to be involved somewhat, then probably in the Austin area rather than DFW, San Antonio, Houston etc areas. The Upper Middle Class (or better) in the Austin area could be the targeted market.
That's a cool opportunity. I've never been a bar guy, and I'm not sure I would want to hang at a place called Miscreant at my age, but it could work. I will warn you that a relative of mine lost his shirt with a bar. If I understand it right, multiple bars/clubs failed in that location beforehand, but that didn't frighten him. SMH. Group Therapy is still the best bar name I've ever heard.
