Back when I was still in high school, we took a trip up to Seattle and then British Columbia. In Victoria, we went on a whale (orca) watching tour, There were some Japanese tourists on board, and our captain was a savvy man. He pulled up next to one of his fisherman friends, and they chucked him a few urchins. Big urchins. Like, bigger than a soccer ball. They also chucked him a device which he proceeded to use to split the urchins open right in front of everyone and scoop out the roe with his hand. "Uni" is an expensive item in Japan, so his guests were thrilled. I also tried it. It was quite salty. The urchins were still moving their spines during this whole experience. I suspect I will probably never have the chance to have food that fresh again.
uni is awesome when fresh, but when it goes south, it goes quick. I’ve eaten most of the things mentioned although OStrig (I think it was him) has has more game birds. My favorite was a youngish feral hog roast. The gaminess it had was just.....perfect. Like it better than elk. And elk is good. My worst was a squirrel I shot myself in my backyard back in college. That squirrel must have been 200 years old. I breaded and lightly fried it. Too tough to eat, so I then braised it in a gravy for what seemed like several hours. Still too tough to eat. In the end, even our lab wouldn’t eat it.
Being Asian and having spent time in rural Asia more than I count. Some of the more exotic ones: welk sea cucumber jellyfish octopus tentacle with the tentacle still moving crickets ants kangaroo In 2013 was in rural Sichuan Province and was invited to a special meal among the Qiang ethnic group. They gave me a dish with a meat I couldn't identify. I asked them what it was and they said they just referred to it as "special meat".... Also Your Mother! Sorry couldn't resist...
Frog Legs are ****ing awesome, had 'em fried and sauteed...taste somewhere between turtle and catfish.
I've never tried anything wild....I did try venison but I did not like it, I will stick to beef and chicken and the occasional fish and fried shrimp. Kudos to those of you who have, wish I had the appetite for it
Rabbit (Very good), frog legs (ok), deer (very good), quails (good), pheasants (good), duck (very good), hog (not good), and the different type of fishes while going offshore fishing. Red fish, red snapper, spade fish, trigger fish, ling cobias, speckle trout (all good). King fish, sharks, amberjacks, stingray, catfish (are ok.)

Love this. Just purchased some rabbit to try for the first time from 99 Ranch Market off of I-10. Side note: Does anyone know where in Houston you can try Rocky Mountain Oysters?
