DMB's All Along the Watchtower and Cortez the Killer Zac Maloy does a badass cover of Okie from Muskogee. Of course, that's not classic rock.

I have a bootleg of Jason Mraz doing Summer Breeze (Seals & Croft), which is great. Joan Osbourne does a bunch of covers on her new CD. I like hearing well-known artists do covers. It's happening more and more as it gets harder and harder to find artists with good songs. The next logical step is to have them do covers.
Both Foo Fighters' Baker Street cover and Radiohead's Wish you were here cover are both on the Essential Interpretations CD (2 disc set) put out by EMI I think.
