This was a strange one today...I went to my local tire shop. Dude was dressed out in a yellow chicken outfit. No lie. At about 9am (it was 40 degrees) he said it might be a bad idea to wear this for too long, it was warm early but now it's about to got proper hot in the afternoon. "Did you not bring some jeans or something?" "Nope."
But the whole point of that story above was that he gave me homemade tamales. $50/lb for brisket? I don't care how good the bbq is, that's just ****ing idiotic. Very Austin.

A prime brisket at HEB is around $3.50 per pound right now. I've bought 3 in the past 5 weeks...been very busy on the smoker. Choice can be bought cheaper but I think prime is the way to go.
Tamales! My Dad used to drive the family to Galveston in the 1950's with a big ice chest in the trunk just to buy at least 4 dozen tamales from an very old, very tall Black gentleman with a cart on Broadway at a street corner. More, if he had enough. He had to save some for his regulars. I don't know what was in them, but I still remember what they tasted like. Still the best I've ever had. By the time the 4 of us got home in Southeast Houston, we'd put a major dent in them. Then one time we drove down for tamales and the old fellow wasn't there. We never saw him again and never found out why. I'm guessing old age found either the brilliant tamale creator or the really nice tamale cart man. Maybe both. It catches up with us all.
Krogers has sales once and a while for 1.79/lb or 1.99/lb. Its untrimmed and still got the hard cap fat on it though.
So trim it down to a quarter-inch or so like most people -- but to want it to be completely removed is madness! Do you hate flavor?
I think the fun is in the process of learning how to smoke and prepare brisket. After the learning process is over, its just work and a hassle.
