Looking for a great BBQ sauce recipe without ketchup

    Every bbq sauce recipe I've ever tried that uses ketchup ends up tasting like.... ketchup.

    Can any of you suggest a great bbq sauce recipe that DOESN'T include ketchup?

    I'm a chef and I still use ketchup but an alternative would be a plain tomato sauce.

    So, I've tried sub'ing tomato sauce or paste for ketchup and haven't had success. Do you think it would make a difference if I tried HFCS-free ketchup?

    Get a pit. Get a pot. Put the pot on the pit next to the meat.

    Vinegar (white and apple cider)
    Chili powder
    Beer (I like Shiner black)
    Garlic
    Seeds: mustard, corriander, fennel, black peppercorns
    Bourbon
    Brown sugar
    Powdered mustard (Colemans)
    Sliced onions and serranos
    Diced bacon and lemon juice

    After a few hours strain it and blend it and add some tomato to make sauce.

    Um, Ketchup and tomato sauce are not even remotely the same, unless you dip fries in tomato sauce.
    Pretty sure I'm not the confused one...

    They are in fact remotely similar, but whatsomever.

    You can dip what little you have into whatever you've got, Roscoe.

    Honey plus tomato sauce sounds like way too much sugar for me, I dunno though.

    Simply stating that had he asked for a non-tomato based BBQ sauce, I would see what I could find. That wasn't what he asked.

    Tomato sauce & ketchup are very different ingredients. Tomato sauce is essentially tomatoes, garlic & olive oil. Ketchup is essentially tomatoes & vinegar. I promise you, they bring far different tastes to BBQ sauces.

    I never use tomatoes. Not to say that there is anything wrong with it. I try to use mainly what was produced from the meat or meat prep.

    In a nutshell, I made a bbq sauce from the bbq meat that I'm making.

    Do you use a mop? If so, that becomes your base after the last mop. Or make a beef base from trimming/or buy a bad cut of meat for it. If you needed a water pan for your meat, add that to the mop. (Maybe you I would have added some meat trimmings in that drip pan or mop at some point during the smoking. The idea here is to get the actual flavor from the smoker into the BBQ sauce.

    Then there are several ways to spice it. Might not need any extra spicing. I reduce the mixture and add Molasses to thicken and some butter to finish. You can also add that BBQ sauce that someone bought your for a gift 2 yrs ago, and you never used it. :)

    If you want it thicker, add arrow root.
