What Can You Cook...

    Since the majority of people think that women need to cook, or should know how, what meals are you known for...Besides Grilling (My steaks and Brisket's rock)...

    1) Beef and Cheese Enchiladas (tons of cheese on top with red and green sauces)...

    2) Spaghetti (sometimes with Chicken vs. Beef)

    3) Pork Chops with Mashed Potatoes and gravy and cream corn

    4) Taco Soup...

    5) Dirty Rice (yeah, its out of a box, but still good)...

    Not culinary material, but still good...Now your turn...

    My in-the-kitchen (i.e. not grilled or smoked) specialties are...

    1. Chicken Parmigiana
    2. Seafood (combo of shrimp, scallops and crabmeat) Enchiladas
    3. Oven-fried chicken (crispy on the outside, moist on the inside)
    4. Chicken stir-fry
    5. Homemade Chinese dumplings

    A few of my specialities

    fettucini alfredo

    chicken fried steak (the key is to season the flour and the egg with S&P, that way every step adds flavor)

    cabbage

    Right now, I'm eating some pretty good pork loin that I cooked in the crock pot, though I wouldn't consider that "cooking" since I just threw some seasoning on the loin and tossed it in the crock pot overnight.

    I'm also the self proclaimed gravy king. I LOVE making gravy from the meat drippings. It tastes a little different each time, unlike the generic package or canned stuff.

    Since I can read, and own a plethora of kitchen appliances including an oven and stove, along with cook books...

    Give me the time required and I can cook anything. (Often times better than anyone expects.... I don't know how many times I've let my wife take credit for the great meal at holidays, or get togethers... of course she will speak up and give me credit for the work...)

    If you cannot use basic measuring devices and set temperatures, etc... you need help.

    I can cook almost any meat, in a variety of ways. I cook the turkey for the family at Christmas time.

    I've never heard of smoked Fried Chicken but it sounds really good. Care to explain what it is and possibly even share the recipe?

    This is an awesome recipe. You take chicken parts and soak them overnight in buttermilk and tobasco. Then you fry them up like you would normally, until the outside is crispy, but the chicken isn't quite done. Then you take the fried chicken and place it in a smoker for an hour or so. I always make this when I make a brisket, and place the chicken underneath the brisket so that the brisket can drip down on top of the chicken. It is absolutely amazing.

    Carpetbagger steaks are two inch thick pieces of tenderloin with a pocket cut in the middle, and a raw oyster, parsley and garlic butter placed inside.

    Moussaka is a greek lasagna made with eggplant, lamb, and a parmesan custard topping.

    Is this Fatty's own special recipe?! Is there an alternative if I only have a gas grill and no smoker? And when you fry your chicken do you use bread crumbs as well or just all purpose flour? And lastly what do you fry the chicken in?
