Soooo I have a hypothetical question. If I were to buy a roundtrip ticket to China and it has a stop in Tokyo each way.

If I got off on the first leg while in Japan would it void the rest of my trip? Meaning, could I still fly back from China later on my return trip to the U.S. or would the cancel the return ticket?

Usually the rest of the trip is cancelled. You can check the airlines website for their regulations to make sure though.

it's canceled. i found out the hard way once.
try to book a multi-city flight instead, for the exact itinerary you want... there's an extra checkbox to hit for those.
