Sushi recommendations

    Can anyone recommend me some good sushi dishes to order. I have a date at uchi sushi restaurant tonight in austin and i don't want to appear like a total uncultured noobie. i've only had it like 3-4 times in my life and each time i'd had help ordering it. So if know something good at uchi or can give some generally recommedations i'd appreciate it.

    Never been to that place........but stick with salmon, tuna, freash water eel, and a few rolls. (don't order a California roll) ;) Outside of the ones I mentioned, they start getting real fishy tasting. Unless that's your thing.

    If you feel real uncomfortable, most places have a kind of sample plate with several different kinds. You might just want to order one of those and keep it simple.

    Don't drum with your chopsticks, spit anything out (just eat it) and you'll be ok.

    oh, and opt for a beer instead of saki. it's just gross.

    Rainbow Roll

    Do you like raw sushi? Here are the basics if you do.

    First, I always order the spicy tuna hand roll. I love it. Also get an interesting roll at the place. Every sushi restaurant always has a good one.

    As for the sushi, here are the basic ones:

    Ama-Ebi - sweet shrimp - pretty much anyone can handle this one.

    Anago - sea eel - I like it, but it's for a more discerning palate.

    Awabi - abalone - I don't like it. Too chewy

    Ebi - shrimp - Again, anyone can eat this.

    Hamachi - Yellow Tail - very good.

    Hirame - Halibut - OK, but there are better ones.

    Hokkigai - Surf Clam - ugh. Don't order

    Hotate - scallop - Don't bother.

    Ika - squid - This can be good.

    Ikura - Salmon roe - Very good.

    Iku-Tama - Salmon roe with Quail eggs - Don't bother.

    Kani - real crab meat - a cooked one.

    Kazunoko - Herring roe - OK, not great.

    Maguro - Tuna - Awesome.

    Saba - Mackerel - Can be good.

    Sake - Salmon - Another good choice.

    Smoked Sake - smoked Salmon - NO. not good.

    Shiro Maguro - White Tuna - Can be good.

    Suzuki - Striped Bass - Very good.

    Tamago - cooked egg - Nasty.

    Tako - octopus - I don't like it. Again, too chewy.

    Toro - Tuna belly, or Fatty tuna. Not worth it. These go for 10 bucks a pop.

    Unagi - fresh water eel - The desert sushi. Eat this one last, and always order it. It will show you know your stuff. (and DON'T dip it!)


    Also, to show you know what you're doing, here are the basics:

    Mix the wasabi and soy sauce. Don't put the ginger in it. The ginger is meant to eat a strip of every time you finish a piecr to clean your palate, so you can fully experience the taste of the next piece.

    Also, NEVER dip your sushi in the soy rice side down. Always just dip the fish, leaving the rice untouched. Otherwise, you just taste wasabi and soy sauce, negating ordering different types of sushi to begin with.

    If you must dip the rice in the soy and wasabi, just order the rolls. You'll have a better experience, and you won't have the sushi chef roll his eyes at you.

    I like that better than Asahi or Sapporo, although neither is bad. But Kirin is the best Japanese beer to me.

    OK, so I obviously don't know what I am doing after all these years of eating sushi.

    Of course, I could care less if the sushi chef is rolling his eyes at me. Usually the sushi chef is too stunned and focused on the fact that my two daughters, six and two years old, eat sushi.

    at uchi, start off with a "hot rock" appetizer. get the "surf and turf" version. they bring a scorching-hot rock out to the table in a bowl full of rocksalt. a second dish contains 4-5 pieces of raw "kobe" beef and 4-5 raw scallps. a third dish contains butter and spices. first, put a bit of butter on the rock and let it sizzle for a few seconds. next, place a piece of the raw beef in the spices and coat it thoroughly. then, place it on said rock for about 1.5 min. per side. eat. next, do the same with a scallop. repeat.
    get several pieces of fish (yellow tail, salmon, tuna) and a couple of different rolls (california, rainbow, spider.)

    drink lots of beer/wine/sake/martinis.

    take your date back to her place.

    have fun.

    Sapporo makes a really good dark beer...almost as good as guinness

    Agreed...I also have to have at least one roll...The Philidelphia (cream cheese with salmon)..mmmm...

    I am never a big fan of dark beer, so I don't drink guinness, although I sometimes try some German Alt beer. I am a all Pilsener or Weizen guy.

    Thanks guys! this was exactly what i was hoping for. One last question about alcohol. What about wine? I'm not a huge fan of saki, and i love beer so i'd be okay with that, but if i were order wine with the meal what basic types go well w/ sushi?

    Martini with Sushi? Never tried before. But warm sake is better than beer for Sushi, in my opinion. One should never drink Korean Soju. That's just ...

    Toro = Yummy...but it's a bit pricey....I've always been partial too to Yellowtail....

    Maybe some German Riesling? But warm Sake or even some Chinese rice wine is better with Sushi. You can also go with Beer. Although I like wine, I would not recommend that with Sushi. If you want to go Japanese, go all the way :p

    Definitely some kind of light white, imo - pinot grigio, riesling, etc.. Sushi is all light and airy, to me. Though the hot rock appetizer suggessted is obviously dark meat.

    Also, if you're not afraid of looking a little less manly, places like uchi usually have flavored sake's that are really good and nowhere near as stomach-clenching as basic sake (which can be good, too, though).

    I second that!!!! And I also agree to always try their signature roll. I always do and they are always fantastic!!!!!!!!
