    Ah did not know that. I knew they tasted different, but couldn't quite figure out how. Seems...lighter, somehow.

    Is that what it is? I thought restaurants over here just didn't know how to properly handle the extra fat in duck. I've only had one good duck experience in the U.S. and I've given up. I now only eat duck in Hong Kong or China.
