Mama's Gun- Erykah Badu, that album is as mellow as it gets.

Maxwell's Urban Hang Suite is another one, but that album is mostly for the ladies.

Anything by Mythos, David and Steve Gordon, Vas (Azam Ali is the most amazing Vocalist I have ever heard) Steve Roach or anything by Hemi-Sync or Dr. Jeffery Thompson which actually alters your brainwaves via binaural beats..

Tapestry by Carole King has to be the album that all other mellow albums are modeled after.
Blue by Joni Mitchell is depressingly mellow
Woodface by Crowded House is mellow with a pop punch
Imperial Bedroom by Elvis Costello is mellow by his standards
Call Me by Al Green is soulful mellow
Shoot Out The Lights by Linda and Richard Thompson
All Shook Down by The Replacements
    Katy Lied by Steely Dan
