Can't say I've listened to many anime soundtracks, but I agree. Both of the soundtracks (Departure & Masta) are really good albums, anime or not.

Edit: Oops, I didn't realize there are 4 albums out. Never heard the other two. I forgot to add, I found myself liking this series more then Cowboy Bebop even though I didn't want to.

 

I'm not a big anime fanboy myself (although I can get hooked on to a series though), but here are some good streaming sites that has basically every series out there:

Berserk (by far)


I like all the series better than I do the movies. Death Note is a mind-bending mystery story, GTO is an awesome action-comedy, and Berserk is your basic ultra-violent drama.
