I have a ton of leftover ham. Does anyone have any good ham recipes? I had a couple of ham & cheese sandwiches for dinner and made a big pot of jambalaya this evening, but that only got rid of half of it. I need to make something that I can put in the fridge and eat periodically over the next few days. Also, my ingredients are fairly limited, so simple recipes would be the most useful to me. Help me with my ham dilemma!
Oooooh... good idea. I'd need to make it with thighs and cheddar cheese though, so I don't know how good it would turn out. I wonder...
"Eternity is two people and a ham," - Irma S. Rombauer in the original Joy of Cooking BTW, something my mother does to leftover ham is fry it in the frying pan. Makes it FANTASTIC. I don't care much for Ham on the whole, but when she fries it like that, it's GREAT!
For Breakfast, just toss a slice or two in the frying pan to eat with your eggs. You can cut it into strips for a salad. Ham and potatoe casserole Fritattas or omellets http://southernfood.about.com/cs/hamrecipes/a/hamrecipes.htm

I do not like Green Eggs and Ham I do not like them. Sam, I am. I do not like them here or there. I do not like them anywhere. I do not like them in a boat. I would not, could not, with a goat. I will not eat them in the rain. I do not like them on a train. I do not like them in a box. I will not eat them with a fox. I do not like them in a house. I would not, could not, with a mouse. I do not like Green Eggs and Ham. I do not like them. Sam, I am.
