cooking with fresh veggies

    For about a month i've been trying to cook with only fresh vegetables, but I feel like i'm just making the same stuff over and over again. Anybody have some recipes or seasoning ideas? Don't tell me about anything to complex, because I like to spend an hour or less cooking.

    I love making chinese vegetables, Kung Pao style. I mix 2 tbsps reduced-sodium soy sauce with 2 tbsps water and 1 tbsp. rice vinegar. Then I add a tsp of granulated Splenda (sugar works) and 2 tsps of cornstarch. Finally I add a tsp. of red chili sauce and mix well. Then I stir fry the veggies with Pam and minced garlic and add the sauce. VERY low calorie. Usually serve it with rice...mmm, I do love my Chinese food.

    When I choose to be less complicated, I stir fry broccoli, onions and bell peppers in olive oil and add Mrs. Dash. I also like 'em with hot sauce. Nothing goes with broccoli like Cholula.

    Also, grilled skewers are always fun. Personally I like thick slices of onion, bell pepper, and pineapple.

    I like spinach.....i get it made 2-3 times a week...

    sauteed spinach w/ mushrooms, spinach souffle, spinach lasagne, spinach casserole, etc.....can't tell you exactly how to make any of this stuff though...

    My favorite seasonings(not used all at once) are: lemon, fresh basil, garlic, yellow onion, italian seasonings, a little salt, extra virgin olive oil...

    Vegs & fruit I usually buy:
    red potatos
    corn on the cob
    zucchini
    yellow squash
    mushrooms
    cabbage
    carrots
    cuccumber
    celery
    pineapple
    gala apples
    black/red grapes
    pears
    yellow/white onions
    red & green bell pepper

    Most of the time I just steam or stir fry it in e.v.o.o.

    I always make chicken breast too, so some help with that guys... :D

    Squash, zucchini, asparagus, red peppers, and/or onions all grill very well. Just cut them up into large pieces, spray lightly with pam and sprinkle with Tony's and garlic powder. We use a special fish or veggie grill pan. It has holes in it. Grill to taste.

    Another thing I have started doing a lot in the house is I saute green beans or asparagus in a black bean sauce. I buy a garlic black bean sauce from the chinese section of any supermarket. Put a little olive oil and 1 tsp (you don't need much) black bean sauce in a pan, stir well. Cover and cook to taste. I like them fairly al dente, so under 10 min works great for me.

    So are you going for healthy cooking or just any new recipes you can get?

    How do you prep fresh greenbeans? I kind of remember making some with my grandpa along time ago, isn't there I string I have to pull off?

    Both. More healthy, but I cook "good" food sometimes too.

    Well, I am incredibly lazy and buy the prewashed bags of green beans. They are more expensive, but the quality of the beans is great.

    Modern green beans are virtually stringless and do not need to have the string pulled off. I used to have to destring them when I was little also. Now you just snip the ends off and cook.

    OK now I can offer my recipes on the foods you listed.

    Red potatoes: Heat oven to 350 degrees. Cut potatoes into 1-2 inch cubes with skin on and wash thoroughly. While potatoes are still wet stick then in a container with lid or bad. Sprinkle a packet of Italian dressing seasoning NOT dressing itself onto the potatoes. Bake 20-30 minutes. Finish under a heated broiler for about 1-2 minutes.

    Corn on the cob: Place on foil and brush with butter and sprinkle with salt and pepper. Wrap corn in foil. Place on grill until desired cooking result is reached. Some people I know like their cobs slightly browned, they say it adds a nice flavor to it.

    Zucchini and Yellow Squash: I cook these together. I just slice them up and sprinkle with salt, pepper, garlic powder, and onion powder and bake for 15-20 minutes. My girlfriend adds cheese on top of her with about 5 minutes left to bake. I say YUCK to all cheeses!

    Mushrooms: Depends on the type. BUTTON: Slice them up and sauté with butter or margarine and sprinkle salt and pepper for 5-10 minutes. Add a few splashes of Worchestire sauce and cook for another 5 minutes. PORTOBELLO: brush with olive oil and sprinkle with Rendezvous seasoning and grill for 1-2 minutes on each side.

    Cabbage: Slice cabbage into 6-7 slices, like bread. Butter one side and sprinkle with salt, pepper, and garlic powder. Add a cut slice of bacon on the same side. Wrap in foil and bake or grill for 20-25 minutes.

    Carrots: I eat these raw or boiled. Don't really have any great recipes for them. Sorry. :(

    Cucumber: I eat these sliced in salads and really nothing else unless you count pickles. Sorry. :(

    Celery: Again, I eat this raw or use it as a flavoring agent in other recipes.

    Onions and pepper: Love to dice these up and sauté them just like the mushrooms and eat them as a side dish with any meal. Make sure you have some gum or mints afterwards though.

    There's so many veggies but not a whole lot of time to eat them all if you buy everything that sounds good. The only thing I buy every single time is a bag of baby spinach with sliced carrots. I started buying the frozen spinach bc it takes up way less space but I'm not sure yet which I prefer. I try to throw some fresh spinach into everything I make if I can.

    sauteed leeks -

    take the pale green and white part of leeks - not the bulb end, and not the really green, thicker parts - and cut them into 1/8" strips. put a little olive oil and/or butter in a skillet and put over medium heat. throw in the leeks and add some sage, thyme, salt and pepper. keep stirring them until they're nice and soft.

    usually, i use take a salmon fillet sprinkled with salt, pepper, finely ground orange rind, and a bay leaf -- and throw it on the bed of freshly sauteed leeks in a 400 degee oven for about 35 minutes. the flavors go really well together, but you can also eat the leeks as a side.

    Have you tried grilling or broiling veggies?

    Non leaf vegetables are pretty good grilled and a simple recipe is brushing them with virgin olive oil and coarse sea salt and grill. Things like zucchini and asparagus are really good with a little char. You can also grill with sesame oil, soy sauce and a little hot sauce.

    Besides grilling you can also oven roast vegetables. Red and green peppers are great in the oven along with all sorts of tubers which go great with olive oil, sea salt, black pepper, garlic and onions.

    Another quick thing that I've started doing with vegatables is to liven up a frozen pizza. I like putting peas and broccoli onto pizza and putting fresh tomato slices on and baking does wonders for even the cheapest frozen pizza.

    I like to cook ground pork with black bean sauce, minced garlic and hot peppers and then serve that with Chinese long beans, asparagus or broccoli.

    Hello, I started a thread called "How do you like your steak"

    I eat meat. Mostly chicken breast, fish and ground turkey... sometimes lean beef.

    Oh didn't realize that was you..

    However I was thinking if you're gonna eat healthy by consuming veggies, why not just eat more salad? I'm no nutrition expert, but I was under the impression that cooking your veggies would just take whatever healthy nutritious stuff it had.
