You beat me to it. Papasito's has the best fajitas. Garlic butter. Grilled onions. And Lupe gives you humongous tortillas. They were like burrito size. Ridiculous.
Yes, I would chug their green sauce by the gallon if it were socially acceptable. That stuff is like crack. I love their quesadillas. Beef or chicken con una grande margarita esta muy bueno para drummer_de_ima.

I had the worst fajitas of my life in Boulder, CO. The seasoning tasted like bad chinese stir fry...teryaki, maybe. I really like the Carne Asada at El Paraiso in Montrose on Fairview. I also like to simply go to one of a number of Mexican meat markets and buy fajita meat to grill--very good and quick. Matamoras Meat Markets are my preference. I used to do an elaborate marinade myself featuring homemade Arbol sauce (doctored from a Rick Bayless recipe), but the meat markets make it simpler for me, so know I consider it a waste of Arbol sauce to use as a marinate, when I can just buy good meat prepared for me.
I hate (sort of) to admit it, but I think Pappasitos fajitas are some of the best. There are equally good, more authentic versions of the fajita available throughout the taqueria landscape in Texas, but Pappasitos has a consistency unrivaled in the "TexMex" universe. I quote Pete the Cheat above because that is my favorite description of a fajita ever.
Lupe's are the best IMO, haven't had any better to date. I've had Pappasitos about a half dozen times and I don't think they're anything to write home about. Several other places I would go to before them for fajitas.
YUP I love their green sauce!!! Yummo! I would have to go with Pappasitos...the worst was the fajitas at La Rosa...they were so dam rubbery. EW!
Apparently it depends on which Lupe's you go to.. The 'new' ones they have built, meh, not so much. But if you go to the original little hole-in-the-wall out there on I-10 and Hwy6, get there early or you will have to stand in line. It is where you go when you say 'I want the best fajitas I can get tonight'. If you like the grilled onions, Fajita Willies does good steak fajitas.. But it's hard not to be spoiled forever after having gone to Fogo De Chao once a year for my anniversary for the last 4 years.. oh my... to expand on the pillow fight theme.. it's as if Hugh Hefner designed a Fajita ride at DisneyWorld and entire sororities from every part of the planet were all riding the gauzy-lensed soft-core pillow-fight ride inside your mouth.. while wrapped in bacon and showering with liquid happiness... Ok *now* I am hungry...
Pappasito's (mmmm, garlic butter... *drool*) is indeed the best... in Houston. When in Austin, I thought the fajitas were much better at Iron Cactus. And ima, I go to Los Cuco's a lot for lunch, and I think it's damn good. The menu is beyond huge, and the price is nice. However, if I had to choose between Los Cuco's and Los Tios, well, Los Tios would win.
Since I first tried their fajitas, I haven't eaten anything else on the menu. They're that good. Not to mention they give you more than you can ever hope to eat.
For beef fajitas, nothing beats Lupe. For chicken fajitas, the best BY FAR are at El Tiempo. I've been to the El Tiempo 1308 cantina on Montrose and the chicken fajitas there are on the level of Lupe's beef fajitas.
If Lupe's had onions, I would probably give them the nod even though they are a bit over tenderized. I don't mind the lime because I used to squeeze it on their liberally at other places. I don't know, it's been a while, but I didn't like the Pappasito's fajitas when I tried them. Maybe they just don't feel authentic. It could be the soy sauce and teriyaki sauce marinade. Maybe it's just because I was too young to really be critical of food, but the best fajitas I had was at a place called Fandango's on westheimer near the beltway. Too bad the place changed and tried to class itself up instead of being a hole in the wall. They went under after that.
